Eggs do not cope well with frequent temperature changes. Hence why supermarkets keep them out but to ensure longevity they should be stored in the fridge. However eggs should be allowed to get to room temperature before cooking.

Also Large egg shells are not as strong as small ones - in the warehouses large eggs are stacked at the top. :D

We keep them out the fridge, they're fresh from the chickens, therefore have no use by on them and i have to guess.

BIL moved in with us briefly, and he put all the eggs in the fridge (we have trays of 30, so it took up nearly the entire fridge!)

Possibly down to all the cut backs. :rotfl:
I saw some on sale at a "farmers market" a while back, sold as "double yolkers" - how do they know without opening??

Fridge for myself also, but we don't generally use lots of eggs. Fits and starts, but we only usually buy 6 at a time.

  • I keep my eggs in one of those pot chickens on the worktop (I'm sure you know the sort of thing I mean - they were fashionable in the 1970's but seem to be making a comeback in the shops, I like it, it's kitsch!) so mine are at room temperature. I did read that they are best not stored in the fridge so mine have been kept out of the fridge ever since.

  • We get trays off local farmer with 30 odd eggs in and have had quite a few double yolkers which always sparks off excitement amongst the children lol.

I couldnt keep this many in the fridge if i wanted to but i have always kept mine in egg basket on kitchen side, im sure i either read or was told eggs are better at room temp?

Although i keep fruit and veggies in the fridge lol
