Eggs, in the fridge or not?

Don't think i will change where i keep them, just wondered where everybody else does and if anybody has any scientific reason.
Opinion on everything, knowledge of nothing.

  • I keep mine in the fridge because I heard they last longer that way :-) plus my fridge has a little egg compartment.

    My Mum keeps hers in the fridge, however when I moved in with DH he just kept them in the cupboard which I did find strange at the time.

    I would prefer they were kept in the fridge TBH although I've never yet had a bad one so it must be okay.

    Thinking about it logically they aren't in the fridge in the supermarket.

    As I understand it, they keep longer in the 'fridge, but since egg shells are slightly porous, salmonella (and other bacteria) can be more of a problem in a 'fridge if condensation forms on the shells and runs off to contaminate other items, which is why supermarkets don't refrigerate them.

    I've no idea whether that's true, but it sounded plausible to me!
  • My husband puts eggs in the fridge...& I take them out again. ;)

    I think eggs should be cooked and/or used in baking, recipes etc, at room temperature so prefer to keep them out.

    Haha I was chatting with no1 son the other day about this.
    I always keep mine in the cupboard so they are room temperature, which is better for boiling.
    However, he told me that is ok, but, if you put them in the fridge then you should leave them there, as once you take them out they don't keep so well.
    I hope that makes sense.

    in the fridge..

    Just think of where these things are kept in the supermarket
    and their supply chains

    Well, I buy them by the mega box in Sainsburys (think it holds about 18?) to save money. I do eat them before they expire but don't want to waste them unless I absolutly have to (say I am not able to cook for myself for a while). I have always kept them in the fridge, have done so for the past 10+ years and don't seem to have aquired any egg related injuries as yet. I did once forget to put them in the fridge and they went off before I could eat them. It was so obvious they were off, yokes totally changed and whites were creamy. Learnt from this!

    RE: Where things are kept in Supermarkets, do you keep bread and cakes on self-service display at home? Most people I know keep them in the fridge (cheese or cream cakes) or in a bread bin ;) I also keep apples in the fridge, they are out on display in Supermarkets but again, I like to keep them fresh for as long as possible and the fridge helps me achieve this. Oranges (and most unopened citrus fruits), Bananas (unless skinned), Potatos (unless "New") and Onions (unless cut) are better out though.

    I keep mine in the fridge, but only because it has a special compartment and I think I will have less breakages that way :)

    They do need to be at room temperature before being cooked, especially for meringues, so I take them out a couple of hours before.

    I keep some in the fridge and half a dozen on an egg rack ready for using.
    I just top up the rack when they run down.
    Don't know whether it makes any difference realy but I was told eggs should always be used at room temperature,especially for baking.
