The ones they tend to have free tend to be quite flimsy so we tend to buy a bag for life if we do indeed up in a French supermarket.

Lait ecreme is full fat afaik, semi is Demi ecreme. As far as I remember, semi is usually blue top and normally sold in either 1 or 2 litres only.0

Seems the question "Just another thought...can you buy fresh or UHT skimmed milk out there too? hasn't been answered so here is a definative answer about buying milk in France, I know, I was in SuperU 30 mins ago.
First most French only use sterallised milk, sold in "bricks". lately they have started selling pasturised milk, in the chilled cabinet, near the butter but only semi skimmed and full cream is available for both types of milk.
I have never found skimmed milk here, it may be available in large towns though.0
