Must admit its news to me that this happens.
So - how do "people" make sure they get what they need FIRST from the "reduced food" counter before "businesses" take it all?...and yep thats a genuine question.
Get there first! Do some research - nobody has a right to get first dibs on reduced goods. The 'businesses', due to being regular customers, know when the best times are for getting reduced items and where in the store to find them. They don't always get what they're after but, by being in the right place at the right time, they maximise their chances.
When I worked at Tesco, we got to know the 'business' shoppers and they were often a very welcome sight, especially if we had a bunch of stuff to clear. When you've got half a dozen trays of new potatoes left at 6pm that go out of date that day, you are not going to shift them by trying to sell them to the 'people'. My store has a MOD base close by and one of the chefs would base his menu for the next day around what he could get cheaply on his evening shopping trip. As soon as he was spotted in store, all of the Fresh Food sections went for their yellow reduction labels!0 -

Market stalls often sell off their stuff cheaply to businesses at closing time. Traders aren't going to want to take stuff back if they can avoid it so plenty of canny business owners buy their vegetables at closing time.The man without a signature.0
