Edited to add - I've just looked up on the internet and found another turkish delight recipe - it says to line the tin with cling film and then lightly oil the cling film ( I would use a plain sunflower oil, not olive oil or stuff with a strong flavour as it might give you odd tasting turkish delight ) - but that could work as a lining if no baking parchment available! )
Predictably, no baking parchment.I have greasproof paper and cling film though - the cling film looks favourite at the moment!
If you lend someone a tenner and never see them again, it was probably worth it.0 -

Do this fairly regularly because a couple of minutes extra boiling can really change the consistency. You don't want the ball not forming properly and splurging into the cold water, but you don't want it so that you can easily pick it up. Somewhere in between. A 'soft' ball.TL0 -

Ooh, another tip: change the water after each soft ball 'test'. And shortly after you start boiling, add some to some cold water regularly. You know it isn't ready but it will start to give you a feel of what it's like and over the time, you will fell how it changes.TL0
