I realise its too late now but it might help someone else.

I have substituted marmalade for honey/syrup but I guess any preserve would do.

    :)

    How did the muffins go?

i wasn't sure if you could substitute something as the golden syrup gives it its stick together power, doesn't it?

The marmalade works fine. I used it when I ran out of golden syrup and honey. No problems with crumbling.

    Recipe:

    Makes 10x10 inch tray

    6oz Butter/marg
    4oz Golden syrup/honey/marmalade!
    4oz Demerara sugar (or granulated/caster/golden/softbrown/etc)
    12oz oats

    Preheat oven Gas 5
    Grease tin/tray
    Melt butter/marg and sugar together
    remove from heat
    stir in oats and syrup/honey/maramalade
    press into tin
    bake 40ish minutes till golden
    slice while warm
    turn out when cold

Not too much prep, long hassle free cooking, easy finishing. Good breakfast/snack on the go and cheap. Liven up with fruit, nuts and spices.

You're welcome! I use Vitalite so more healthy than butter. I hope it is outweighed by the oats, fruit and nuts. :)
