Demeraras very crunchy. Id use half and half caster /golden and half muscovado. Im sure it will turn out fine!

I was going to say the same as Artytarty (re. the brown sugar) and I woud substitute all the white for brown sugar - I prefer the demerera but it's all down to your personal taste.0

To make the Stock Syrup
Makes 150ml (5fl oz)
It keeps indefinitely and it is very handy to have some to hand.
200g (7oz) caster sugar
200ml (7fl oz) water
Place the ingredients in a saucepan and bring slowly to the boil, stirring to dissolve the sugar. When the sugar has dissolved, boil for 2 minutes and allow to cool.The truth may be out there, but the lies are inside your head. Terry Pratchett

I wouldn't worry too much, just substitute whichever sugar you prefer. There's plenty of moisture in there from the yoghurt and eggs.
I might also check the cake 5 mins before you otherwise would, in case the new recipe cooks faster.0 -

I'd go for the muffins.This recipe is great and you can substitute alot of the ingredients for ones that you have in.

I've never tried it, but I'd say if you boiled some sugar with water to make a caramel you could use that in place of honey/golden syrup. It might be overly sweet though.
Make some muffins! Muffins are always good and you can chuck basically anything you have into the batter.0
