    ^ looks good, I fancied doing a cake with lemons, I do a similar cake with lime and polenta, is nice with ice cream..

    SPICE-SCENTED CARROT CAKE WITH A CRUMBLE TOPPING

    "Think of carrot cake laced with a delicate blend of spices. This one is perfect for a mid-morning pick-me-up and has a wonderful crumbly topping, which adds to the rustic charm. I have included hemp seeds and flax seeds in the topping, partly for flavour and texture, but also because they both contain essential amino acids, protein, fibre, vitamin E and trace minerals. This cake also goes beautifully with a little yogurt for breakfast."

    Serves 8-10

    225g white or wholemeal spelt flour, sifted
    30g oat bran
    1 teaspoon ground allspice
    ½ teaspoon ground cinnamon
    1 teaspoon baking powder
    ½ teaspoon bicarbonate of soda
    Large pinch of salt
    180g carrots, coarsely grated
    225g runny honey
    60g unsalted butter, melted and cooled a little
    225g Greek-style natural yogurt
    1 large free-range egg
    40g walnuts
    40g sultanas

    For the topping:
    45g white spelt flour, sifted
    1 tablespoon unrefined golden caster sugar
    3 tablespoons cold unsalted butter, cubed
    Pinch of salt
    2 tablespoons shelled hemp seeds
    1 tablespoon finely ground flax seeds

    Preheat the oven to 180°C. Grease and flour a 22cm springform cake tin.

    Start by mixing all the dry ingredients in a large bowl, then add the grated carrots. In a separate bowl, mix the honey, butter, yogurt and egg. Beat well with an electric hand mixer until thoroughly combined and then gently fold this wet mixture into the dry ingredients. Scrape into the prepared cake tin and level the top with the back of a spoon or a palette knife.

    To make the crumble topping, put the flour and sugar in a medium bowl. Rub in the cold butter until the mixture resembles coarse breadcrumbs, add the salt, hemp seeds and flax seeds, mix, then sprinkle the topping onto the cake mix, pressing in a little. Transfer to the oven and bake for 35–40 minutes, until the top is golden and you start to smell a nutty aroma.

    Remove from the oven and leave to cool in the tin for about 10 minutes before turning out onto a wire rack to cool completely.

    A work colleague has mentioned using polenta, too.

    No freezer movements yesterday.
    Last day of workmen yesterday - I took a photo of dinner but can't find the camera lead to download it! :o I can't find my cheque book either - to pay for the work. :eek:
    For dinner we had Piri Piri chicken + HM wedges with roast beetroot/red onion and sunburst tomatoes - it was yummy.

    I'm really excited just booked 8 Zumba lessons for £22 I can't wait to go back, I refused to pay the £7 a lesson normal price, it starts next Tuesday got the deal on living social and is a 7 minute walk from my house, happy days!

    No. I really can't find my cheque book. :eek:I had it when I paid 50% on the day they started work - can't remember where I put it. :oSo much in the house has been moved - carpets/floorboards up and stuff moved from room to room. :eek:
    I will have to go into town and get a Building Society cheque to pay the plumber. :(

  • I have enough food in my freezer for evening meals for 2 weeks now, which is good cause I'm skint yet again till payday, which is 2 weeks tomorrow! I have chicken breasts, beef mince, a few ready meals, some hot dog buns and bread rolls I'd frozen(got them 2 for a pound at Asda the other day) I'm still learning the money saving thing, I'm trying hard to not spend but I'm doing better as time goes on.

    Hi everyone, hope all well.
    It's been a while since I last posted, busy with work etc.. I have been catching some of your posts.
    Been doing well with reaching into the freezer and slowly using up stuff as well as putting ys stuff in ha ha. Taken out a gammon joint to roast tomorrow, it is one I bought reduced after Christmas.
    Hope to post again soon. :)

    Nothing out of freezer today... 3 quick meals.

    Breakfast - toast and marmite
    Lunch - cheese on toast (finished cheese but more due tomorrow)
    Dinner - roasted mediterranean veg risotto again

    Might snack on an orange in a minute..

    In to freezer today - nothing.
    Out of freezer today - 2 HM muffins + HM Salmon quiche.
    For dinner we had roast pork with roast potatoes + roast parsnips + roasted veggies - beetroot/red onion/sunburst tomatoes + gravy.
