    For tea I made Parsnip, Leek & Potato Gratin, based on an Abel & Cole recipe here

    which I chose so I could make use of last week's Aldi SuperSix.
    I halved the quantities, and used creme fraiche instead of cream. I was pleased with how it turned out

    It was very tasty, and there's enough for another couple of portions to go in the freezer; total cost was £3.55, or about £1.20/meal.

    Had organic delivery today and went in Waitrose for a few bits as I was passing and had some vouchers to use. Can probably count on 1 hand how many times I've been in a shop this year though :D


    Out: 1 portion of hm bolognaise (that's the last of the batch I made in October used up now). Added in 1 courgette cooked in garlic.

    In: (freezer) Half a loaf of hm bread.
    In: (fridge) delivery of salad box/eggs, plus yoghurt and 2 x OJ
    In: (cupboard) pasta, sugar and free olive oil


    Freezer Contents Left (doesn't look too bad as mostly home made or home grown):

    Out of freezer - cornish pastie, 2 apple turnovers and some HM TITH.
    In to freezer - nothing!
    I had prawn curry + basmati rice + garlic/coriander naan bread for dinner.

    Morning all. Looks a fairly nice day outside, but for some reason, I'm betting it's a bit chilly!

    No idea about meals today, probably scrambled egg for lunch. Won't be buying anything as trying not to spend so much. Ds will probably end up at mam's maybe.

    Anyway, enjoy your day all.

    It was just strawberries cooked in a pan on the hob till soft then pureed with a stick blender, like a coulis I suppose? I can't remember if I added sugar, maybe not as they were very sweet?? I can usually remember if I've used a particular recipe but I can't recall one for that so may have been freestyle! It's very good on Swedish Glace vanilla soya ice cream and have also used it as a cheesecake topping.

    I know I definitely added sugar to the blackcurrant sauce though!! I got some recipes from the Blackcurrant Foundation for those.

    My mum mostly makes jam from the excess fruit but if I have overloads from what I've taken home to eat fresh I tend to turn it into sauce (easier!).

    Well done to those who are already up and out too! ;)

    Been bumbling along in the background trying to stick to the challenge (though as you can see already starting to spend for May! :rotfl:)

    Having said that I did manage to defrost the freezer the other week so must be doing something right!!

    Bargains of late for the freezer have been :
    2 sets of 12 white rolls down to 60p each so 5p per roll, 6 crumpets 10p - just under 2p each, 2 mini quiches 60p each (would do a person each for dinner with just some salad/frozen veg).

    So in the freezer right now are:
    24 white rolls
    2 packs crumpets
    1/2 loaf of bread
    3 chicken fingers
    1 pie
    2 mini quiches
    1 bag quorn mince
    1 bag quorn pieces
    1 bag mixed veg
    1 garlic bread
    1pt milk
    1 bag frozen roast potatoes
    1 pack mince

    Also in fridge have:
    6 eggs
    2pt milk
    Butter/spread
    Jam,
    1 block cheese
    3 tubs hummus (over-ordered there but love it so will feed me all week!)
    1 tub cous cous salad
    Cucumber
    Tonights dinner of chicken leftovers from last nite! ;)
    ready to roast chicken joint
    gammon
    fruit and veg

    Also enough rice/pasta/noodles/cereal to last for most of the year! :)
  • hi all

    been fairly MIA, have had quite a bit going on here so have been lurking and reading. need to update our inventory of cupboard(s) and freezer here really! am on a sort of diet at the mo and that has largely meant meal planning around the cupboard and freezer contents and just buying in stuff to batch cook.

    this week made a medium portion of tuna pasta (enough for 2 servings) and then a large pasta bake as a friend is coming over next week so that will serve us both with enough over for one separate portion. also made a large stirfry which was enough for 4 servings.

    next week going to make risotto, lasagna, and meatballs and freeze those too to last through to the end of the month.

    might start counting my NSD I think! :rotfl:

    Strawberry and blackberry sounds lovely.I just planted some currant bushes so will add those if I get any fruit this year.

    I am an early bird and with so much to fit in with looking after my husband tis a bit of me time:-)

    Asafoetida powder is a resin from a parsley-like plant, mainly used in powdered form in Indian cooking. It is used in vegetarian dishes for its strong garlic and onion flavour (only needs to be used in small quantities), and for its anti-flatulent properties when cooking beans and pulses.
