Skilly what is the stamps for Christmas in your signature. I've Google it but can't find any info.

We have loads of cards to send at Christmas so I'm intrigued.

I'm planning Quorn spaghetti bolognese today. Hopefully 2 lots so I can add more meals to the freezer.

Not much out of the cupboard this week, but I'm using some bits out of the fridge so I'm pleased about that. Probably always likely to be difficult to do loads of cooking as it's half term here in Leicester.

Only had a splattering of snow yesterday so no sledging for us!

Morning all, weather has brightened up, so Valentine's lunch out. lol
Hopefully a "roll" in bed today ............................... filled with bacon ...................... with my coffee. ;)

ms_night_ryder - you're right. I had images of you walking up that hill. lol

skilly - at least you got something for your savings. I haven't decided what to use the savings on yet?? Hubby would like a Xmas abroad holiday, but depends what Son is doing. Will he be coming "home"??

Think I'll get the cheese today and any bits I need and have a NSD tomorrow (which will be the only one this week if achieved) - still a low spend week so far though.

Ooooops forgot it's Valentine Day, maybe I'll try to make the effort and make some liqueur chocolates later as I know he likes those, and then again maybe I wont make the effort!!!!
  • Not been shopping for over a week and a half now. Hoping to make everything last until Monday. Past two evenings we have had bean chilli with various veggies both frozen and fresh stuff still ok from our last shop, I made it in the massive crockpot slow cooker my sister gave to me. There is still a bit left in a pan in the fridge. First evening we had it with rice and the second evening we had it with home made pizza based garlic bread, all vegan and I made the pizza bases from scratch using fast active yeast, bread flour, olive oil, brown sugar and a bit of salt, leave to rise for 30-45 minutes, stretch into shape, add toppings and cook, voila! The original recipe was designed to make Chicago style deep pan pizza but I find it works great for thin or thick pizzas. The garlic 'butter' was vitalite mixed with some extra virgin olive oil, frozen chopped parsley, garlic powder (I find crushed real garlic too strong) and to add a certain something some Swiss marigold bouillion powder, the reduced salt organic version I find is best. This evening I am going to use the same base recipe but make vegan pizzas instead. I have some good quality long dated vegan cheese (not the nasty soya cheapo rubbish) that I got a while ago and also some vegan wheat based 'chorizo', going to put some frozen veggies on the pizzas as well. I am also going to make some chocolate chip cookies xx

I'm doing vegan pizza today as have some things to use up. Well actually might be veggie pizza as just remembered the stilton might be nicer on it and that's already open :o

What vegan cheese do you use?
and I've never seen vegan Chorizo! Where is that sold?

zafiro1984 hope you are feeling better

dasophster hi there haven't seen you in a while :hello: Is tofu vegan ? If so, I can recommend the Taifun tofu with basil which I bought in Waitrose. Really basil-y.

Think we are having organic salmon fillets with peas and broccoli tonight.

May finish my Ocado order today. Got small order coming from Riverford tomorrow and another small order from Abel & Cole Monday. OH has volunteered to go to Lidl tonight.. to get his own Rachel's organic low fat rhubarb bio-live yogurt on offer at 99p lol

In the oven for early dinner (only had banana for lunch):

Hm pizza base, no tomato puree as don't have any..
Leeks - used the last one up.
Rocket - finished the bag up.
    Garlic
Olives in basil & garlic oil - final Graze offer box, now cancelled
    Stilton

Put 6 wedges of the stilton in the freezer, as supposed to be eaten within 3 days of opening.
Put 2 tiny portions of olives in the freezer, not overly keen on olives so didn't want to overdo my pizza!

The veg from the Ocado box lasted me really well for the week - just beetroot and some cabbage left now.
Ordered veg box and eggs from Riverford for tomorrow but not planning on buying anything else this week I don't think, should have enough water, dairy, etc to last another week just about.

The only thing out of the freezer today has been the handful of sweetcorn kernals that went into the boys dinner. Was planning to cook some bolognaise but hubby came home from a trip to the opticians via M&S and asda and we have a valentines meal three course with rose cava... don't mind if I do!!

DS1 went back to school today and is recovering well. He is far more lively this evening than I have seen him in the last week which is brilliant. Hubby is complaining of a sore throat though so hoping he doesn't develop it. Or me! Last thing I need with half term on the way!!
    3 kids(DS1 6 Nov, DS2 8 Feb, DS3 24 Dec) a hubby and two cats - I love to save every penny I can!
