Afternoon all, it's freezing cold here and very windy atleast i've got some washing out so that's a bonus.
Well the food plan today is they had chocolate roll things for breakfast, lunch i had toast and dinner is going to be pork chops, hawaii rice (bought this from lidls think it's just rice, peppers sweetcorn peas and something else) and salad.
Don't normally go to the shop during the week but went to costcutter as they have any 3 pasta and sauce for 99p, come in handy if running late at the weekends or if not well quick and easy though ds wont eat them.
I will try and do veg week but...wont do it on the Sunday as they enjoy their Sunday dinner to much.
Lip_stick, dd is nine, she only got him back a little so far but she has every intention of getting him back properly as she said. The last time he phoned she just kept on saying hello on the phone, i can't hear you sorry you must have the wrong number and hung up, then came through laughing and told us what she had done monkey.
Right off now to clean up and hoover. Catch up later and keep warm everyone.0 -
Went to Al.. this morning - needed some fresh veggies - Super Six.
Normal breakfast + free biscuits - tea break.
Going in freezer - LO sage & onion stuffing. Out came 4 slices HM bread.

Afternoon all. It's getting cold again. Might have to put the heating on. Had my boiled egg and salad sandwich for lunch, which I really enjoyed. Veggie Week Challenge Recipe:
Labour of Love Soup
You might want to call this Green Soup because the main ingredient is peas. Alternatively, it could be called Labour of Love Soup as it is a bit of a fiddle pushing the peas through a sieve or rotary food mill. If you don't do this the pea skins give the finished soup a rough texture which isn't as nice. Also you do need to process all the ingredients, not just the peas. Processing seems to release much more flavour and gives a smoother texture as well as distributing the oil from the onions throughout. It is worth it, though: topped off with home-made croutons, it is a really delicious and nourishing winter meal.
Serves 4
450g (1lb) frozen peas
Approximately 450g (1lb) potatoes suitable for mashing
1 large onion
2 or 3 carrots
2 or 3 sticks of celery, including leaves
1 or 2 leeks, if available
A few sprigs of parsley, including stalks, if available
Oil for frying
A little salt and freshly ground black or white pepper
To serve: garlic or Marmite croutons, freshly ground black pepper
1) Cook the peas in water in the normal way for 8-10 minutes.
2) Peel and prepare the potatoes as you would normally for mashed potatoes.
3) Peel the carrots and clean the celery.
4) Add the carrots, celery and parsley to the potatoes and cook all together for 20-25 minutes or until tender.
5) Put the peas in the food processor with a little of their cooking water (discard the rest) and whiz to a puree. Push through a sieve or a rotary food mill and set aside.
6) Peel and slice the onion and peel, clean and slice the leek. Cook gently in the oil until soft but not coloured. You can put a lid on the pan if you like, so they half fry, half steam.
7) Strain the cooked potatoes and other vegetables, and reserve the cooking water. Remove the celery and parsley and discard. Mash the potatoes and carrot together and put into the food processor with the onion and leek. Whiz together until smooth.
8) Put into a large clean pan with the sieved peas and stir together. Stir in some of the cooking water until you have the thickness you like. Season to taste with salt and a few twists of pepper, and heat through.
9) Garlic croutons/Marmite croutons: for garlic croutons, spread the bread very lightly with garlic butter before cutting and frying; for Marmite croutons, spread the lightest smear of Marmite over both sides of each slice before cutting and frying.
Serve the soup in deep bowls with the croutons and freshly ground pepper.

Jelly Biactol - I like the sound of that veggie burger recipe! Got no eggs at the moment though but will try it when I do. I've got a vegan burger recipe that uses ground flax seeds instead of egg, I will give it a go before posting up though as may be a disaster!
Breakfast - banana
Lunch - fruit bread toast
Dinner - bolognaise out the freezer
Made 2 more fruit bread loaves this afternoon, will stick one in freezer for later in the week.
Contemplating an Ocado order - they have things I want that are hard to get where I live plus they have them on offer and I have a 20% off £40 spend.. and I could even try their veg box.
Lipstick, I know how you feel, I don't like to starve any guests but I am shocked at how much some eat lol. Would he do you dinner if you went there instead?0 -

Jelly:- like the look of the recipe but would have to use sweet potato instead of ordinary potato, but I can't see why it wouldn't work ok. Will hang onto recipe as I have all of the ingredients - frozen.
Breakfast:- fruit as usual, ate the last of the plums, thank goodness, I was getting a little bored.
Lunch:- stewed apple and yogurt, should have been my OH's pudding last night but he is ill and preferred the jelly, and pistachios
Tea:- roasted stuffed peppers, plus dark chocolate, OH is having smoked salmon - wish I was ill!!!0 -
Veggie Week Challenge & Aldi Super 6 recipe:
Beetroot Hash
Serves 4.
450 g potatoes or sweet potatoes (or both), peeled and cut in finger-width pieces
2 medium beetroots, peeled (Aldi Super 6)
6 veggie bacon rashers, chopped; or 3 veggie hotdog sausages, sliced
1/2 onion, chopped
60ml double cream
1/2 teaspoon each salt and pepper
cooking oil or butter
optional: 1/2 handful chopped fresh parsley
1) Steam the potatoes, covered, for 10 minutes or until tender and transfer to a bowl.
2) Steam the beetroots for 10 minutes or until they are tender. Transfer to a bowl with the potatoes.
(to cut down on preparation time, you can cook the potatoes and beetroot the night before)
3) Cook the veggie bacon as directed on packet; the hotdog sausages shouldn’t need precooking
4) Add the bacon or hotdog sausages, onion, cream, salt and pepper to the vegetables and mix.
5) Heat the oil or butter over a medium-high heat and stir in the hash mixture. Flatten with a spatula to compact. Cook the hash until it is brown on the bottom, about 5 minutes. Continue cooking until heated through, stirring up the bottom crust occasionally, about 10 minutes.

Veggie Week Challenge recipe:
Spring Garden Tart
Spring onions are so often a supporting ingredient, but, cooked gently to bring out their sweet side, they can be the centrepiece in a tart such as this. All sorts of early-summer green vegetables rub along beautifully with each other when combined in a tart.
Serves 6
for the pastry:
75g (1/3 cup) chilled butter
1259 (1 cup) plain (all-purpose) flour
pinch of salt
1 egg, separated
a little cold milk
for the filling:
20g (1 1/2 tablespoons) butter
20 spring onions
large handful of spinach leaves, washed and roughly chopped
130g (1 cup) peas
130g (3/4 cup) broad beans
handfuls of chopped mint, parsley and chives
85g (3/4 cup) mature Cheddar cheese, grated
125ml (1 cup) milk
250ml (1 cup) double cream
2 whole eggs, plus 2 egg yolks
1. To make the pastry, chop then rub the butter into the flour and salt until the mixture resembles fine breadcrumbs. Add the egg yolk and mix in, and then slowly add a little milk to bring the mixture together into a ball. Wrap in cling film and refrigerate for 30 minutes.
2. Preheat the oven to 160degC/325degF/Gas 3. Roll out the pastry and line a loose-bottomed, greased 25cm (10 inch) tart tin with it. !!!!! the base with a fork, line it with baking parchment and ceramic baking beans/dried beans, then bake for 15 minutes. Remove the beans and baking parchment, then return to the oven for a further 10 minutes. Seal the base by painting the egg white onto it and baking for a further 5 minutes.
3 Turn the oven up to 180degC/350degF/Gas 4. Prepare the filling by melting 15g (1tbsp)butter in a frying pan and gently frying the spring onions, whole, until they start to soften and colour up. Meanwhile, wilt the spinach in the remaining butter in a separate pan. Boil the peas and broad beans for 2 minutes then throw into ice-cold water. Arrange first the spinach, then herbs, then peas and beans, then spring onions in the pastry case and sprinkle with the grated cheese. Whisk together the milk, cream, eggs and egg yolks and pour over. Bake in the oven for 40 minutes. Serve either hot, with salad or new potatoes; or cold.
(If it's the right season, just use whatever vegetables and herbs are at the peak of freshness in the shops or from your garden.)

My veggie mother has cast doubt on my ability to do veggie week, not because I couldn't eat vegetarian for a week or longer but because I low carb for diabetes. She's going to dig out Rose Elliot's veggie low carbing book ans I will be going through low carb recipes I photocopied from library books
Now I remember why I get shopping delivered. Abel & Cole non arrival last week messed up my organisation so hit Lidl, ASDA and Sainsbury's this afternoon. Am now knackered. Lidl now does organic mature Cheddar 1.99
Dinner tonight is organic salmon fillets 2 for $4 ASDA fish counter offer saving 56p, with YS organic spinach 62p Sainsbury's, done Iranian style with garlic and yogurt (borani esfanaj)
