Littlewillow, how about a pea and ham soup? Cheese and ham toasties? Chefs salad? (basically a big chopped salad with a bit of pretty much anything in it) You could use little chunks of it in an egg fried rice or omlettes?0 -
My issue with our freezer (my new nemisis) is that I'm sure things go in and then I cant find them to come out again! Also, we're now on a diet, so all the goodies from Christmas in there that we didnt eat are still there as we went on to our pre wedding diet on the 27th! GRRRR. We've plenty fish (think I had a thing for buying salmon) and alot of chicken, but it's all very samey. Has anyone got any ideas for salmon fillets?Married the lovely Mr P 28th April 2012. Kirri, the Sainsbury's garlic flavoured olive oil is very good.
Still on offer @ £1.32 (250ml) until 21/02 - I'll get a few bottles to stock up - saves all the faff making it.

4 weeks in and just over £46 spent -I'm going for an empty freezer drawer (two would be nice) and then I'll be able to organise the weekly menu better.
My budget is not going to be helped by a new development. My son has a milk intolerance, so I've got to get my head around soya products and cooking cow's milk free. I know there are several of you using soya, any tips would be greatly appreciated.
Probably most annoying is that I can often get cheap cheese from the Coop, but in the most part that'll have to stop now, apart from a bit for sarnies for DH for work.
Got to completely re-think my meal plans/ideas and learn how to bake cakes and biscuits with soya milk!!
Might not be too bad, as being veggie, has meant I don't tend to buy much ready made foods, but I do rely on certain things when I'm in a hurry. Potato croquettes, waffles etc, so panicking about when I'm in a rush most of all.0 -
^ I don't think milk intolerance existed as such when I was a kid, not by the teachers anyway and they didn't test for it afaik. I was still forced to drink it at school despite not wanting it as I used to get sick a lot with it, finally got them to stop making me drink it when I threw up in storytime
I can drink it skimmed as an adult but avoided it for years and now drink soya milk more through choice - it also doesn't have that horrible 'milk smell' that cows milk does so suits me - I get the Morrisons fresh but it's gone up to £1.10 and was only about 88p last year. It seems to work just as good as cows milk in most recipes just the same, says to use within 3 days but I use it for 5 as other soya milk says 5 days - apart from yorkshires not rising but that may be me.. I eat dairy cheese/yoghurt so can't advise on those but there doesn't seem to be a lot of choice really. I've used it in protein shakes/scones/pancakes too, I just really use it as a direct replacement, don't really think about it as just seems to be the same in cooking

I looked for it yesterday and couldn't find it! It was a big Sainsburys but it wasn't a very nice one though.. had a look in Morrisons this morning but they only had a medium olive oil on offer which didn't sound inspiring so I didn't bother. I'm using up the groundnut oil for potatoes etc but miss the olive oil in my bean dip.
Breakfast - hm bread toasted with marmite
Lunch - Quorn meat sarnie and last pack of crisps, thought I had more but turned out to be a pack of pasta.. followed by a large Aero..
Dinner - can't decide between quinoa, veg and halloumi or omelette and potato wedges.
Spent today on cucumber/dill and pack of Wright's ciabatta mix with coupon in Morrisons, didn't need that but a 45p treat as makes lovely rollsthen fennel/clementines from the new market stall - cheaper and fresher looking than the supermarkets and I like the way it comes in paper bags!! Already spent £19.33 in Feb :eek: (£9.23 on food and £10.10 on fruit/veg). Don't feel I'm making much headway in clearing stocks out the cupboards though.

Thanks for that Kirri. I don't think they've taken notice of milk intolerance as much in the past. It used to give my brother asthma attacks, but they still kept giving it to him at school, before the link was eventually made. Poor devil never wanted to drink the milk, no wonder really!
I tried making a cake with the soya milk and it didn't seem to rise much (although I didn't follow the instructions properly and just bunged it all in and mixed it, oh and didn't sieve the flour, so it could be that), but I did read somewhere that corn flour should be added to increase the amount of starch that is less in soya milk. Might give that I try if I get yorkshires that don't rise. I don't usually have any problem, so should be able to tell. Will report back soon.
Hopefully, he'll grow out of it, because I don't really fancy taking his own food to birthday parties, and carting around a portion of soya ice cream to every birthday!!
We will have to see how much of an improvement we see by taking all the milk out, and take it from there. I guess he could be dairy intolerant, but I hope not, as I have 3 chickens and wouldn't know what to do with all the eggs if he can't eat them!0 -

I use the Mary Berry baking book, never sieve the flour, the main thing is the hand mixer I use that really helps but I usually bung it all in and they come out quite highInteresting tip about the corn flour, I have some of that too, might try a bit in my yorkshires! I don't use any milk in biscuits either.
Do they have tests for it or is it a bit of trial and error?
You could sell the eggs or barter them if does turn out he can't eat them - though I find eggs in something easier to digest than eggs on their own.0 -

I don't usually put milk in biscuits or cakes (though the coconut cake I made the other day did have), but I think shop bought things have all manner of unnecessary ingredients!
I might have a look at the Mary Berry book, I liked her in the Sport Relief Bake Off!
4 plain flour to 1 corn flour. But presumeably then you're mixing in baking powder etc, most cakes far as I was aware use self raising. Oh well, no doubt we'll work it out. You seem to do more baking than I'm used to doing (though that looks set to change now), so you may find out before I do, but I'll let you know how I get on!0 -
Yep shop bought things have all sorts in, I'm awful for studying labels and hence why I tend to make most things from scratch myself as so fussy on all the unnecessary additives! They put things in products you wouldn't expect but at least the labelling is better these days.
The MB book is really good - there is someone on facebook and who also has a blog - Rising to the Berry - who is baking her way through the whole book with pics and write up. I mainly use SR flour as well as baking powder - but if I mix it in a processor it's fairly flat, since I got a hand mixer they don't go wrong!
Dinner - decided on omelette and potato wedges, did at least finish off the pot of mayo so one jar out!0
