Took OUT some minced steak today and made cottage pie that has fed three of us for lunch, one for mum to take home, left overs that will do DH for his lunch tomorrow and enough of the meat mixture without potato for at least three more meals. Also used some previously frozen gravy that I forgot we had.
IN - well the rest of the mince has to go somewhere doesn't it so at least three portions in.MARCH £62.38/2500 -
The salsa verde (Riverford recipe) was amazing flavour, I love it. The courgette fritters (Frugal Feeding blog) were really good, though think the recipe needs bit more seasoning added and I used quite a bit more gram flour than the recipe suggested. Will do them again.

I make something similar to these courgette fritters, they taste amazing and as you say include quite a bit more gram flour. I adapt it depending on what I have in the cupboards.
125g grated courgette
125g grated carrot
1 garlic clove
1 tbsp fresh coriander
1 tbsp fresh mint
1/2 tsp ground cumin
1/2 tsp ground coriander
1/4 tsp cumin
125g gram flour
1/2 tsp baking powder
100g feta
100ml milk
1 egg
Salt and pepper

Just tasted the Choc courgette cake and it's good! VERY rich though but love the hazelnuts in it. Bit more of a special occasion cake than something to snack on though, I feel like I need a gym session after eating a slice.. Got rather a lot of it too, more than I could eat in a week.. not sure if it would freeze with the ganache on it?
This is the recipe I followed but I reduced the sugar/cocoa a bit as it seemed excessive, especially the sugar..

More realistic gram flour measurement too, I don't know how much more I added to the other recipe but it was quite a lot, I had to keep adding it in the bowl to get the right consistency.. next time I'd make the gram flour batter separately first then add the other ingredients.0 -

More batch cooking today, double amount of courgette fritters -though find them very time consuming cooking them a few at a time plus bit concerned how much oil I go through... wonder if they would bake?? can you bake lumps of batter?? Had some with the last of the salsa verde for dinner. The rest will go in the freezer when cooled. Think I will use the rest of the gram flour to make pancakes with a spicy potato filling rather than more fritters..
Did two pan fulls of runner beans for the freezer.
Got double amount of dried borlotti soaking overnight to make beanburgers tomorrow. Will flavour these with harissa as I've got no pesto and will coat in polenta again to use it up...
I have to confess to throwing away the polenta chips from the freezercouldn't face eating them.

Freezer movements yesterday
Out:- 2 x Waitrose sausage casserols, didn't really like them, far too spicey
Chicken and mushroom thingy also from Waitrose, glad that was the last one.
7lb blackcurrents, picked earlier this year, have started to make wine with them, already have sugar etc. should make 2 gallons hopefully.
In:- YS raspberries, YS sausages, YS smoked trout.

Just cooking another batch of polpette - used up 1/2 ball of frozen mozzarella and frozen lime zest (supposed to be lemon) and realised I'd forgotten to pick parsley so had to use mint. Will have some for dinner with bread.
Also cooked up the dried borlotti to make the bean burgers - though might finish them in the morning as bit tired for more batch cooking now. I'll have to eat the ice cream in order to fit the burgers in the freezer
Picked 15 courgettes :eek: a bunch of carrots, onions, a few kg of beans and salad leaves today. Way more than I can eat - and freezer is full.
Next year I would like to start with an empty freezer and batch cook the produce straight into meals for the freezer instead of starting with a freezer full of bits and pieces..0 -
In to freezer - nothing.
Out of freezer - HM quiche + pasty + HM muffins + HM cake + HM JJ's Herby Cheese Bread.
We were busy stripping wallpaper last night so had a toast meal - baked beans on toast with a poached egg.
Tonight we had HM Quiche + roast sweet potatoes + mushy peas + tinned carrots. Mr F found a tin with no label when we sorted the garage - he thought it was soup so opened it for his lunch.
