    In to freezer - HM SC pastry.
    Out of freezer - Sea Bass for Friday's dinner.
    For dinner we had HM Chicken pie with roast potatoes + roasted beetroot/red onion/red pepper/tomato/white onion.
    It was tasty but next time - I will make 1 1/2 times quantity of white sauce for the filling.

    Hi all

    Monday - out of freezer spaghetti bolognaise sauce and a garlic baguette.

    Tuesday - out of freezer stewing lamb for lamb hot pot and lamb kebabs for DS1. Used up some potatoes, and home grown broccoli from fridge.

    Wednesday - Just DS2 and DH for dinner as DS1 and I had a day out and had a lovely late lunch at pizza express. Out sausages, potato waffles and a tin of beans.

    Tonight - out of freezer packet of chicken thighs, will also be using up three peppers from fridge to make paprika chicken. Will be having with french beans, and cubed potatoes. Will have a couple of portions to go back in.

    Really need to do an inventory of my freezers and cupboards before I go back to work so I know what I have in.

    Just arrived in the mail a book I ordered What to do with a courgette glut.
    It looks good and the preface is all i have read.

  • Courgette, Tomato & Roasted Red Pepper Gratin

    Serves 4

    2 small red peppers
    15g butter
    1 large garlic clove, crushed
    500g canned plum tomatoes
    1 tbsp fresh oregano leaves
    750g large courgettes, cut into 5-6mm thick slices
    2 tbsp olive oil
    150g coarsely grated cheddar
    salt and freshly ground black pepper

    1. Preheat the oven to 220˚C/Gas Mark 7. Put the red peppers on a baking tray and roast in the oven for 20-25 minutes, turning them once or twice, until the skins are blackened in places and the flesh is soft. Seal them in a plastic bag and leave to cool. Then break them open, discard the stalk and seeds, peel off the skin and tear the flesh into wide strips.
    2. Meanwhile, melt the butter in a large, deep frying pan and add the garlic. As soon as it is sizzling, add the plum tomatoes and oregano. Bring to a simmer, breaking up the tomatoes with a wooden spoon, and leave to cook gently for about 40 minutes, stirring, until the sauce is really thick and beginning to stick to the bottom of the pan. Season to taste and spoon half over the base of a large, shallow baking dish.
    3. Heat a large ridged griddle until smoking hot, then lower the heat slightly. Toss the courgette slices in the oil and griddle in batches for 2 minutes on each side, seasoning as you go, until marked with dark lines. Set aside on plenty of kitchen paper to drain.
    4. Scatter half the griddled courgettes over the tomato sauce, followed by half the red pepper strips and half the grated cheese. Spoon over the remaining tomato then repeat the layers once more, ending with the grated cheese. Bake for 25-30 minutes until lightly golden and bubbling.

    Hello there, I've been lurking for a while which I have found really motivational. I really need to join, I get into the habit of buying to use the money rather than what I need if that makes sense, I don't like the cupboards being bare and have a tendency to store food for comfort. But, my freezer needs defrosting and it would be quite nice to have some cash surplus rather than my stores so I am going to try and reduce the stockpile somewhat. A small start today - crumpets, bacon, chicken breasts out of the freezer and NOTHING in - yay - small steps!!
    I'm not a failure if I don't make it, I'm a success because I :tried!

    Only a few potato wedges out the freezer today to go with quiche.

    About to put in some bolognaise I made with the mince I defrosted yesterday.

    No freezer movements today.
    For dinner we had sausage roll with HM wedges + salad - grated carrot, celery, cucumber, pepper, red onion, white onion, tomato.

    Nothing out the freezer for me today, had long day with builders in.

    Breakfast - yoghurt and muesli
    Lunch - biscuits and special k (freebie) - I couldn't get in the kitchen... far too sweet even for me.
    Dinner - speedy red pesto pasta with courgettes and mushrooms.
