As someone else said carry on your plans as usual and call a friend and talk about how excited you are and how amazing the weather is gonna be there etc etc.. so that he knows you'd quite happily go without him...then leave all his stuff ready for him so he knows you still want him to go so he can't have a huff about that!
If it comes to tomo and he's still a stubborn a ss!! then go and have a great time!!

He has done this before although we had not actually booked a holiday, but i had booked the 2 weeks off from work.
I went to the travel agents and said what is the cheapest holiday going out tomorrow, they came up with one for £99 so I booked it.
I cried my eyes out at the airport cos I didn't know anyone and I was terrified of flying, but i still went.
I had a fab time met loads of people and had loads of fun.
But....that was 20 years ago and I used to be a size 10
however, I have got a good book and I would still go if I had to0 -
Call his bluff next time, the moment he says 'Im not going' in a hissy fit, get on the phone, in front of him, ring the travel agents and
then pass the phone to him, tell him to cancel his place personally.

You've not said if he's being OK with you or if he's still being a sulky boy.
I really do hope that you have a great holiday.
If worst comes to worst, just leave him to it and do your own thing.0
