Having tried many different types, I also use the black enamel ones. They're reasonably priced, long lasting and survive the dishwasher. Surprisingly, some of the more expensive ones are not dishwasher safe so if this is an issue check the details before buying. I'm not convinced the Mermaid, etc, are worth the very, very big mark up.

My Mum was a school cook and, when they stopped actually cooking in her kitchen (you know, when cost savings meant they stopped doing what Jamie Oliver is reinventing 20 years later!) they gave away all the stuff they needed for the 'real cooking'. She took home a few baking tins and has subsequently given a couple to me. Not sure what they're made of - it's just an aluminium coloured metal with no special coatings, but they are fabulous. Totally indestrucstable and any burnt on food just seems to dissolve off them. Keep thinking I must suss out a catering supplier some day to see if I can find any more.

I am still using the baking tins that belonged to my grandmother, they are steel and have never been washed ever, just wiped out after use, over the years they have built up a black non stick layer, so getting cakes etc out of the tins is no problem, although I do use non stick baking parchment to line the bottom of the cake tins.

She always said buy the best you can afford and look after it, I have found over the years that this is so very true, buy cheap and you end up replacing it within in a very short space of time.

Mermaid tins are fantastic. I've had some for years, and they are great. Worth every penny.
  • I have some Mermaid ones - I got them at TK Maxx - they often have them for 70% off the RRP! They are without a doubt the nicest I have ever used.

Thanks so much everyone. Have been to TKMax today but no Mermaid tins for sale - will keep looking or try to find another make.

Keep looking for the Mermaid ones, they are so worth it ( and keep checking TKMaxx, they get them in mine quite regularly).

I love my pyrex dishes and I would be lost without my 2 pizza trays (from Tesco a few years ago) and I love my muffin tins but I am otherwise lacking in this area. My baking trays tend to buckle if in the oven for a long time or at high temperatures. I don't own a cake tin yet but want to make an orange cake I saw on another thread.

What size and type of baking trays/cake tins etc do you use? Can you recommend any? Do you make them double up for different jobs? eg can you use a muffin tin for fairy cakes? Can you use a pie dish for big Yorkshire puddings or even cakes?

I got rid of all my tins when I bought loads of pampered chef stoneware. It's expensive but really good. I have a 6 cup muffin pan which makes the best yorkshire puddings and the pizza stones cook frozen pizzas wonderfully. I've just worked out that the stoneware i have cost me about £300!!! Never mind all the other bits - I have obviously been to too many parties!!!

You can use the bakers for cooking chickens, making sponges, anything really.... they always clean well and don't leave any residue smells!!
