Why do sellers block their items they sold

Yes I know and I use it myself. However it is far from accurate (have you ever done it on yourself)! It may be ok for small sellers, but on volume it goes bonkers!

The more difficult or time consuming I can make it for competitors, the better.

Last time I used GB it did not recognise multiple quantities and variations, so regardless of how many of something had been sold, only one came up....

The americans use Terapeak a lot, because it's cheaper to them and gives them a lot of information.
