    Afternoon everyone!

    I'm really pleased as I've just chalked up NSD 2,3 and 4 in a row!

    Okay, I wasn't very well and had to stay at home but the thought of all those days crossed off cheered me up (a bit) and we must grabbed our successes where we can!

    Spices
    Cumin Seeds 1 tsp
    Coriander ground 1 tsp
    Ginger puree 1 tsp
    Garlic puree to taste I use Tesco. As much as you like.!!
    Fresh red chilli deseeded and finely chopped but to taste.
    Tumeric a small amount (don't overdo!!)
    Fresh or Frozen Spinach about 2 or 3 lumps to taste to enhance
    Double Cream to calm it down a splodge to taste!!!
    All Butter Puff Pastry, make or buy important for flavour, other types of Pastry won't give you that buttery flavour so needed and Butter is classic Chef's ingredient paying you back in flavour terms.
    Aim is to make Indian the ingredients.
    Onion 1 or 2x to immerse spices in and add flavour to Baked Beans.
    Standard large Tin of Baked Beans I use Tesco Chopped one wants a bit of texture in onions so medium dice.
    Cook or microwave Chopped Onion mixture with spices, one can do it on Cooker but my Cooker trips so moi is Microwave and Oven Queen.
    Make sure spicy onion mixture is nicely transparent and not overcooked 5 mins will do but rely on intuition to get it exactly right.
    Add in can of Baked beans of choice.
    Bake blind with free range egg glaze one half of the Pastry. I used a Pyrex lid for this!!
    Remove from oven and let it cool a bit before up ending Spiced Baked Bean mixture.
    Roll out or cover with ready rolled pastry top, making fancy as one likes, puncture to allow steam to escape. Egg glaze and cook for 25-30 mins till nicely golden.
    Allow to cool down a wee bit just to settle ingredients. Serve hot with Green Salad, Fresh Green veg or Veg of choice,
    Enjoy!!

  • Meat eaters add Sausages of choice. I use high meat sausages and or bacon and exclude spicy mixture. Sausages and Bacon work better in a plain mixture with a lightening of garlic and chilli to give it a pzzazz. Cheese can also be added to filling in both veggie and non veggie versions. Cheese would be good to calm heat down if spicy mixture a bit hot.

  • I only use ingredients I ENJOY. If it tastes good then it is gonna make the cheapest humblest of fare taste delicious. Bargain. Veggies used Riverford Organic reliable, tasty etc. Ingredients used All Butter Puff Pastry Tesco, Waitrose would do a magnificent version. Fresh Chillis Tesco ( I am growing my own for my sins!!). Tinned Beans are Tesco's which I like. If ingredient has good reputation taste wise ( I used to read Good Food Magazine for Ingredient and product recommendations). I think this helps save money as one ENJOYS ingredients no matter how poor humble ones' income is.

    So far so good for NSD #3 but then again I haven't left the flat! MrS will be providing dinner again, and in return I have done his washing and tidied his bedroom up a bit (not making a habit of it!). Really want to catch the elusive #3 today!

    So do I basically state how many no spend days I am aiming for and then at the end of them month announce if I've succeeded?
