Leaking and burnt coolant smells of sweet curry, so you may well have a minor leak.

My car is the same when I first turn on the heater, but it loses very little fluid and the smell goes after a short while.

I'd consider replacing the heater matrix, but on my car it involves dismanteling the whole dash, so I'll live with it.

ive had a look around the car today and the smell is from under the bonnet.

i noticed there was some old water sprayed over every where, it was a nasty brown colour, maybe this is the cause of the issue, i cant see any leaks anywhere or smell it anywhere else.

Sounds like something blew and it is expelled coolant. The brown colouring is the rust from the coolant system; probably a reason why it blew.
The greater danger, for most of us, lies not in setting our aim too high and falling short; but in setting our aim too low and achieving our mark
