Bread flour vs ordinary plain flour?

    the plain flour will definitely work, you might not get quite as big a rise, however ...


    I've not tried it myself, but there are loads of people on the boards who use plain value flour & say it makes bread every bit as good as a loaf made with the proper flour

    Sorry to dust off an old thread, but I am going to try to make a loaf using plain flour.

    Will use my kenwood with dough hooks to make dough

    Hi, Im ordering my bread maker next Tuesday :D Im super douper excited and cant wait to make loads of new things with it. I think more often than not I will end up making plain white loaves as thats what my family eats, however i have been looking into flour and i dont really know the difference between *strong bread flour* and ordinary *plain flour* is it super important?

    strong white has a higher gluten content , need it for it to rise properly

    Oh I see, i thought the rise was all down to the yeast and had nothing at all to do with flour :o you can tell Im a newbee at this lol

    The yeast does make it rise, but the gluten helps to keep it there.

    Yep. Gluten is a sticky, gluey substance which makes the dough elastic and stretchy. This helps it to trap the gas produced by the yeast, so it rises well.

    Ordinary plain flour will still produce bread, but it'll be rather dense.

    :j Thank you I will be sensible and buy the proper stuff rather than the cheap stuff then lol I knew there had to be a difference i just didnt know what it was
