    You can do a lot with sandwiches, they can taste very good, easily offer lots of choices to guests, look excellent, and they travel well too.

    Tin foil platters are cheap and look good. Supermarkets sell inexpensive own brand cling film for wrapping.

    The best method I've found for arranging them is to cut the sandwiches in to four triangles and line them up slightly overlapping, with the neat uniform cut edge facing up. This also helps people see what is in them. Try to find reasonably square loaves that are ready sliced, both for neatness and time savings. Mixing up sandwiches made with different bread types makes it look much more interesting and taste better.

    You probably won't need lots of different fillings, you can make a good few different variations from a modest selection. I would however separate meat/fish from the other fillings, and label them, as some people don't eat meat or have seafood allergies.
  • herby falafels this recipe makes 16 but you can adapt to make more

    1 slice bread
    1egg
    400g chickpeas
    1 teaspoon olive oil
    1 large clove garlic (not bulb a mistake i made oops:o )
    1 table spoon lemon juice
    1 medium carrot
    1/2 teaspoon ground corriander
    1 teaspoon cumin
    a pinch ground turmeric
    2 tablespoons fresh coriander/parsley

    put bread in a bowl and use blender to make into breadcrumbs add beaten egg add washed chickpeas and olive oil.

    use blender to make it into a paste add crushed garlic and lemonjuice

    add grated carrot, coriander, turmeric and cumin and stir it all together

    get about a heaped teaspoonful of mixture roll ito a ball and flatten slightly on a baking tray brush each with a bit of oil and bake in a preheatred oven (gas mark 6, 200c, 400f) for about 15 mins until crisp cool and serve can be made a day or two in advance

    delish and not too big to transport you could make them bigger if you wanted to just increase the recipe

    How about a rice salad?

    Cook with onion, garlic, carrots tomato,red,green,yellow peppers, peas and sweetcorn. Add some chicken stock and cook it all up until rice is tender.

    any veg will do just use as many colours as possible to make it look really nice. kidney beans if you like.

    You can serve this hot or cold.

    If you really want you can fill mini pittas with the salad. (I would probably cut mini pitta in half to make a nice picky sized food nibble

  • mini pizzas always go down well i make my own to decrease cost heres my recipe i make 4 but increase the ingrediants to get the amount to want

    100g strong white flour
    50g strong wholemeal flour
    3/4 tsp fast acting yeast
    1/4 tsp salt
    100mls milk
    2 tsp olive oil

    sift flours into bowl tip in any bran left over stir in yeast,salt and make a well in middle

    gently warm milk and oil in a pan and pour into well and stir with a wooden spoon

    knead on a well floured surface put the dough back int bowl cover with towel in a warm place to rise

    tomato sauce
    2 clove garlic
    1tsp olive oil
    400g can chopped tomatoes
    1/2 teaspoon mixed herbs
    1 tsp tomato puree
    black pepper

    crush garlic and put in pan with oil add everything in and heat for 15mins then leave to cool

    divide dough in to 4 roll out to about 6inch across put dough onto baking tray add a bit of sauce and add toppings you want

    bake in oven for about 15mins done can be served hot or cold

  • mini bean burgers vegy option?
    1 onoin 1 carrot 1clove garlic 2 slices wholemeal bread 400g can cannelli beans 400g can red kidney beans 1tbsp tomato puree 1 tsp mixed herbs 50g grated cheddar cheese bit of olive oil

    dice onion grate carrotput in to frying pan with oil add crushed garlic cook till soft make bread into bread crumbs (as above recipe)

    blend beans into a paste add breadcrumbs andd carrot mixture mix together

    roll into balls you size put on baking tray and grill 5 mins each side

    put into mini bread buns or leave as is this makes about 8 but it depends how big you want em

    Thanks everyone - some great ideas, I am going to write them all down as whatever I don't use for the wedding will certainly be useful for packed lunches.
