    Morning all,

    I was wondering if anyone had any ideas on what I can do with one salmon fillet and a load of cooked prawns for dinner this evening?

    Happy to do nibbles such as prawn balls, salmon cakes etc I just need to use both of these up today.

    Any help would be fab :D

  • What about a pasta sauce, or fishcakes with a little chilli and some coriander in the mix?

    Pan fry salmon to sear, place in oven proof dish, add prawns
    Mix a dollop of green pesto to tin of chopped tomatoes and add to dish
    Cover and put in oven for 20 mins, medium heat
    Serve with rice and green salad (or tagliatelle)

    Quick and easy - and tastes good!

    I put together a fisherman's pie (flaked salmon, prawns in a white wine sauce with peas covered in mash) yesterday for tonight's dinner.

    Thanks all for the suggestions. I did fish pie yesterday so don't really want to make another for this evening.

    In terms of dinner I'm wondering if I need to use it all this evening?

    The salmon was use by yesterday but looks and smells fine would I be ok to make fishcakes from this and then freeze them? If so anyone have any good fishcake recipes as mine always come out horrible! Alternatively do you think it will last until tomorrow?

    In terms of the prawns I'm reluctant to leave these as they were defrosted over night so I guess I'm going to need to use these this evening?

    How about a chinese meal? You could do prawn & egg fried rice, steam the salmon with some soy sauce and ginger in a piece of foil, and just have it in flakes, and then finish off the meal with a vegetable stir fry.

    I would use both the salmon and the prawns tonight.

    I'm with kunekune. Salmon and prawns are both FANTASTIC with Chinese-y flavours like soy, ginger and garlic. Am I invited for tea????? I'm tired and fed up and don't want to cook...

    Fishcakes here ;) Once they're cooked, you can freeze them. I then cook them slowly from frozen, making sure they're piping hot through to the centre.
