    Thank you - I had forgotten that I had already posted about this before !!! It seems to be a recurring problem for me LOL

    I think it must be to do with cooking too fast as mine were ready before the allotted time... Maybe ?

    I have found most bought muffins in the UK are too heavy. I wouldn't call most of them muffins at all - a good muffin should be eaten within half an hour of coming out of the oven, and definitely wouldn't keep a whole day. Most good shops make them through the day in NZ, where muffins are the standard quick brekkie! (Ah, plum and chocolate, still melted)

    I haven't made any here, so I'm not sure, but it is possible that recipes from Australia or New Zealand wouldn't work because of the flour. UK flour has a lot more gluten in it, which may cause problems with muffins (UK bread recipes have to be adapted in NZ).
