this has happened to me.
I think the problem was that I mixed all the lumps out and the mix was smoth. you dont want - you want thick, lumpy & a bit gross looking- thy then turn out more crumbly:beer: Well aint funny how its the little things in life that mean the most? Not where you live, the car you drive or the price tag on your clothes.

keep wet & dry ingredients separate till the last minute
don't overcook
& most important, don't overmix as lynzpower mentioned earlier
if all else fails, buy or borrow a copy of the Muffins Fast & Fantastic book by Susan Reimer, that's where I got my muffin Light Bulb Moment from0 -
And, don't expect them to get as big as shop/cafe muffins - those aren't natural those aren't0

My eldest daughter starts a full day of pre-school tomorrow so I thought I'd make her some blueberry muffins for her lunchbox. However they didn't rise like the shop bought ones? I used
- 150g plain flour
- 1/2tsp baking powder
- pinch cinnamon
- 1 egg
- 125ml milk
- 50g butter
- 75g caster sugar
- 150g fresh blueberrys
anyone have any ideas?
