    this has happened to me.

    I think the problem was that I mixed all the lumps out and the mix was smoth. you dont want - you want thick, lumpy & a bit gross looking- thy then turn out more crumbly :)

    3 rules ...

    keep wet & dry ingredients separate till the last minute

    don't overcook

    & most important, don't overmix as lynzpower mentioned earlier


    if all else fails, buy or borrow a copy of the Muffins Fast & Fantastic book by Susan Reimer, that's where I got my muffin Light Bulb Moment from :)

    And, don't expect them to get as big as shop/cafe muffins - those aren't natural those aren't ;)

    I agree, this is a great book, worth getting hold of. It was £4.99 when I bought it.

    in case anyone wants to buy a copy of that book HERE'S the best price I can find on-line, £4.14

    I've dealt with the company before (for DVDs) & they've always been fine :)
  • My eldest daughter starts a full day of pre-school tomorrow so I thought I'd make her some blueberry muffins for her lunchbox. However they didn't rise like the shop bought ones? I used
    • 150g plain flour
    • 1/2tsp baking powder
    • pinch cinnamon
    • 1 egg
    • 125ml milk
    • 50g butter
    • 75g caster sugar
    • 150g fresh blueberrys
    i added wet to dry and folded in put in oven for 15mins
    anyone have any ideas?
