    How are you mixing them? Unlike cakes, muffins dont need much 'mixing', just bring the ingredients together with as little stiring as possible, dont worry if there are a few lumps, and you will find your muffins are a lot lighter, and should rise better.

    I really didnt mix very much, they taste lovely and are a light texture. They just have flat tops!

    Hi, boo! Without details of what you did, it's not easy to diagnose. However, my top tips, after several disasters :D
    • measure dry ingredients and wet ingredients separately, and only mix together at the last minute, when you're ready to put them into the oven
    • have the oven hot enough - heat it to higher than the recipe says, then turn down to the required setting when you add the muffins
    • whatever the recipe says, use SR flour and double the amount of baking powder

    I've been quite the lurker here on OS but thought i'd post today as I just tried 'bigmuffins' recipe for the white choc+raspberry muffins.

    I can report that the first lot that came out of the oven had flat tops but the second lot have come out just right. Same lot of batter that was used to I'm guessing it was all down to temperature!

    They do however taste absolutely divine!

    Oh, and I made them with one hand as the other one is in a cast down to a broken wrist so that just shows how easy they are to make :-)

    I am glad you enjoyed them! They are a favourite here as well! I have just picked a load of raspberries from the allotment and stocked up the freezer for the coming year! Will be making a batch of these today too!
    I have to say, it has never bothered me whether they are risen or flat - sometimes if the baking powder is a little stale, they don't rise that much but still taste good!
    Temp probably has something to do with it too! Also if you leave them hanging about after mixing, can affect the rise!

    Have to strongly recommend Susan Reimer's book - Muffins Fast & Fantastic
    She explains it so well - do take the time to read her introduction and you will never again have any problems with muffins!

    Have to report that I had a batch of flat topped muffins today. Reasons were
    1) I didn't use paper cases -so the mixture had nothing to 'climb' up
    2) I overfilled the cups (right to the top) and so as the excess batter couldn't climb up the paper cases it spread outwards instead of upwards IYSWIM

    I recommend paper cases and only filling three-quarters of the way up the cup ;)

    I have to say that it's mmore important to me that they taste good rather than whether they are flat or not....and they definitely taste good!

    Going to try apple+cinnamon next time.

    Does anyone know why my muffins keep coming out with flat tops ?

    They rise up but the tops are either flat, or lop sided flat :confused:

    They taste great but I wished they looked great :rolleyes:
