  • Hi, I bake a lot of biccies and usually pipe them beautifully but on a whim bought a cookie press, at first I used my own recipe for vienese biccies which worked really well as the mix is quite thick but when I tried the biccie recipe that came with the press (a kuhn rikon one) th cookies wouldn't stick to the baking tray and they spread in the oven so the shape wasn't clear! Has anyone got some tried and tested recipes that work in a cookie press, I'd like to do some other flavors than the vienese! on any advice about using the press? Thanks in advance!

    I don't have a cookie press (don't even know what it is lol!), but the Algerians use little moulds for a lot of their biscuits/ cookies. Try a generic recipe such as this as they keep their shape completely. They usually use this as a standard recipe and then decorate them in lots of lovely ways.

    Not used a cookie press but spotted some in Poundland yesterday, butterflies and teddy bears and possibly car/train something like that, just posting in case anyone wanted one
    Trying very hard to be frugal and OS - just plodding on and doing my best!

    I got one from ebay when I bought my nutbrown icing syringe and I've never got round to trying it out yet!
    Its either a Tala or a Nutbrown one thats half the reason I bought it as my mums Nutbrown stuff from the fifties is still going strong ( and I learnt to pipe with one of these :D )

    I'll dig out my old black Good Housekeeping book and find some recipes to try as my edition (1952) actually has the same cookie press in it :rotfl:

    I have a cookie press with the discs (same make I think); I've only used it a couple of times as it is a pain to clean.

    I find that I need to use ungreased baking sheets or paper to get them to stick to the tray; or make the mixture drier.

    I tend to use play dough moulds for normal biscuits (just cover with cling film before you press the dough it - then pulling the film taught will tip teh shaped cookie out - I have some great ones from Japan :)
    For the cookie dough for the moulds, I use 100 g of icing sugar to 300 g of plain flour with 200 g of butter rubbed in, cling film the dough and bung it in the fridge for 30min - then baked for 10 min at 180 degrees after shaping. It doesn't spead at all. I often pack icing sugar in with vanilla pods for a while before doing it, or sometimes with citrus peel.

    It might work with the press, but I've never tried so can't be 100% sure.
