    do you not have any pyrex oven dishes, i am sure it would work in that.

    dont have pyrex too smashable on bad hand day, that why i bought silicon.
    Just made loads of different cakes, but not done upside down for ages
    put silicone dishes on glasss baking trayits got silicone handles so it easy to get out of oven

    I've come to take advantage of your combined infinite wisdom again :)

    I've got a pineapple that needs using up, and eggs and SR flour. I was thinking that a pineapple upside-down cake would be a really good idea, plus it'll keep in a tin while we move this weekend.

    All the recipes I've looked at want either golden syrup or brown sugar. All I have is honey and regular sugar.

    The question is: can I substitute the golden syrup for honey or regular sugar?

    Hi, this recipe does not have syrup, uses creamed butter and suger instead.

  • Thanks, I did see that recipe but it calls for tinned pineapple and the syrup from that and brown sugar, whereas I have white sugar, a fresh pineapple and no pineapple syrup! :)

    Yes-substitute the honey for the golden syrup and the white sugar for the brown. It's not a bad combination of substitutes-the extra flavour of the honey will compensate for the flavour lost on the sugar.

    It won't be exactly the same, but should be yummy anyway. I suppose there's a risk that the honey flavour might be a bit too intense (depends on your honey and your recipe and your palate) -in which case serve in smaller pieces with custard.

    Can this be done? I'll be using a basic sponge mix (weigh 2 eggs, same amount of flour, sugar and marg/butter) but I wonder if i need to add anything as tinned pineapple is much sweeter than the fresh one we've got.

    Any ideas?

    can pineapple rings (or as o/p has said)

    1 oz butter

    1 oz brown sugar

    glace cherries (decoration)

    angelica (decoration)

    few blanched almonds (decoration)


    Sponge mix

    4 oz margarine

    4 oz sugar

    2 eggs

    6 oz self raising flour or plain with 1.5 level teaspoon baking powder



    steam for 1.5 hr or bake 45 - 55 mins 350f gas mark 3
