I wondered if anyone has any ideas? We have been having alot of salad, but it's a bit passed that now. I was thinking of whizzing it up in the food processor, freezing it and then throwing it in whenever I make pasta etc. ?

If you've got all the other ingredients, how about a quiche? Quiche is lovely because you can add whatever you want really and it makes good portable leftovers.:DDec GC; £208.79/£220

You can make the rocket up into a pesto which should last for months in the fridge. http://www.independent.co.uk/life-style/food-and-drink/recipes/rocket-pesto-499796.html0

When we have a glut of spinach from the garden I cook it as normal, cool and freeze. I reheat it gently in a saucepan with a knob of butter and a sprinkle of nutmeg.Away with the fairies.... Back soon0

LIR: great minds think alike. Pancakes with ricotta and spanokopita were the first things I thought of. Mind you, I'd rather be scoffing those spanokopitas in Greece. Preferably with a half-kilo of retsina to go with it.0
