Ideas for glut of tinned tomatoes?

I know tinned tomatoes dont go off but the thought of eating spag bol/lasagne/pasta to use them up, when I'm supposed to be on a diet..!!

Due to an 'administrative error' (I put 4 cans of tinned toms on Tesco online, then partner said 'you haven't added them have you silly!' and added 4 more - and 3 boxes of passata, and I added some tomato puree!) we are practically seeing red!

Has anyone got any ideas for something more unusual (I can't eat peppers (ie, red/yellow/green variety), but anything else is pretty much OK!)

    Dare I say it....? Lentil and tomato SOUP. :D

    If your on a diet a favourite of mine is to add a beef stock cube to a tin of tomatoes and simmer until reduced and thick. Yummy with a poached egg on top served with a slice of toast (on the side if you don't want soggy toast)

    I use them in a sauce for enchilladas, tacos, burritos etc, spanish chicken http://www.elise.com/recipes/archives/000040spanish_rice.php I add the chicken to that but you can put anything in or just have it on it's own. Pizza sauce for bases (could do very thin ones if on a diet)

    They both sound lovely - and though both quite obvious I had thought of neither!!

    You don't have to use them up quickly, they have long dates on them.

    Spag bol doesn't have to be fattening if you don't add too much cheese and use very lean meat. Even the sauce can be made lower fat by using quark or low fat cream cheese or skimmed milk and flour as the base. Herbs add flavour without calories.

    Tomato soup is great made with tinned tommys too.

  • For dinner last night I had some feta to use up so I used it to stuff some chicken breasts, seasoned them, put them in an ovenproof dish, and then covered them with about three-quarters of a tin of whizzed up tomatoes (and some basil) and put it in the oven for about 50 mins. Was very tasty.

    Tomato soup made with equal tins of tomatoes and carrots seasoned with a few herbs added. Then liquidised. The carrots make the soup quite thick and it is easy to make.

    I have also used fresh carrots, cooked them and liquidised withe the cooking water and the tomatoes.

    A few thoughts on the subject ...

    Firstly, tinned tomatoes are evidently even better for you than fresh ones - the canning process increases or concentrates some beneficial chemical.

    Secondly, buy the whole ones. For a start, they are slightly cheaper than the ready-chopped ones. Also, you can use the whole ones for things like full English breakfasts (Mmm - roll on tomorrow morning!) and chop them up for pasta sauces, etc. It is difficult to stick the ready-chopped ones back together again.

    Finally, if you do decide to chop them up, drain off the liquid and do the evil deed in the can - this is much easier than chasing the slippery little ****ers around the pan!
    The acquisition of wealth is no longer the driving force in my life. :)

    Tinned tomatoes have the problem of you have to cut the tops off.

    :confused: I have never had to chop the top off of a tinned tomato ...and I buy the cheapest I can :confused:
    I have had brain surgery - sorry if I am a little confused sometimes ;)

    Otherwise if you don't cut the top out you get that hard part where the tom links to the plant.
