    ANd I work out that the good old all in one method sponge cake costs a basic 50-75p depending on the size, plus the cost of any topping.

    Equal weights of egg, self raising flour, butter or marg, and sugar (eggs weigh in at about 30g/20oz)

    So a simple mix is 2 eggs and 4oz/120g of each of the other ingredients.

    Put in a bowl, beat until very smooth, put in a tin and cook.

    wow great recipes. Gonna try a few of these.

    MY own little favourite, is scones, super cheap recipe, odds are you have all mats needed in cupboard. OH, and these are great for kids to make by themeselves as they dont need accurate measurements and they get to get their hands right into the mix.

    I dont measure ingrediants as i learned to make these as a kid through trial and error, but I'd say maybe half a mixing bowl of flour, big dollop of butter or margerine and same again of sugar (less if not a sweet tooth) a pinch of salt and some milk.

    Mix the lot except milk together, using fingers to crumble the mixture to breadcrumb like mix, add little chunks of butter to flour and sugar till your mix is crumbley like topping for well... a crumble I suppose. lol

    Ok now slowly add milk to mixture till you have a dough that can be needed and rolled out. then roll it to about 1 inch / 25mm thick. use a cookie cutter, scone cutter, plastic cup, or even shape into little rounds using hands ( great and more fun for kids) place on baking sheet in tray and dust top of each scone with a little milk, and a touch of sugar to glaze.
    OK adult only bit now.

    Pop in nice hot oven (180 c) for about 10 minutes or till nice and brown and a knife goes into one and comes out clean.

    These come out nice and crispy on outside and soft and yummy inside.

    Cut open and fill with, jam, butter, peanut butter or whatever else you have to hand.

    You can add fruit or even choc chips to mixture if you have them lying about. i used to use a couple of spoons of mincemeat fruit from jar if no fresh fruit was available and they were the best ones ;)

    MUFFINS - Dead easy, many varieties & Quick

    Set oven 200 degrees

    Put paper cases in muffin tin (makes 12)- could use fairy cake tin but adjust cooking times

    DRY
    in large mixing bowl or jug

    10oz SR flour, 1 flat teaspoon baking powder, 3oz sugar, plus any dry flavouring of your choice
    e.g. cocoa powder, dried fruit, chocolate chunks (1x basics 100g bar cut up) coconut, glace cherries, grated carrot, grated apple, mix spice, grated lemon or orange zest etc - stir to mix

    WET
    In smaller measuring jug 3 and half fluid oz veg oil plus 'liquid. to make up to 12 fluid oz (2x ripe mashed banana, milk, apple juice, peanut butter etc) add 2 eggs (can use only 1 egg if using mashed banana) stir to mix - if using banana or peanut butter you may have to top up with milk - the rule is oil and wet must be 12 oz before adding egg

    When oven is up to speed - add WET into DRY and stir to combine - do not over mix - just enough so no dry pockets remain - put approx 2x dessert spoons into each case

    bung in oven - set timer for 10 min - do the washing up and clearing away - when oven goes ping - test with cocktail stick if comes out clean (if not put back for 1-2min more) when done put muffins on cooling rack and wash muffin tin by which time they should be cool enough to eat the first muffin still warm with melted chocolate chunks - YUM!

    When cool if there are any left you can decorate with icing or frosting (butter cream etc) if you can be a**sed


    Points to remember
    The less time mixing things together the better
    Too much liquid will result in soggy and flat muffins
    Too little liquid will result in hard and dry muffins
    If the oven is too hot the muffins will be uneven and cracked
    If the oven is too cool the muffins will be pale and un-risen

    Chocolate mayonnaise cake

    2 cups plain flour
    1 cup sugar
    2 tsp baking powder
    1/4 cup coco
    1 cup mayonnaise
    1 cup coffee cooled

    Mix dry ingredients, mix in wet ingredients, pour into a pre lined 9 by 12 cake tin cook for 30 mins and top with choice of icing when Finnish, I normally do chocolate butter icing, oh and oven should be 180 degree celcius

    a few years back i only used anchor butter, organic flour, free range eggs and golden castor sugar. then my husband left and i had to do stuff on the cheap. I was asked to use flora buttery in a survey in all my baking. i recieve the tubs free and i am a convert! usually can buy 2 for £2 on offer which equal 4 blocks of butter. Try it. only thing i don't like it on is butter icing.
    i use usual sugar now. much cheaper than caster sugar. i make victoria sponge recipes with 225 g everythibg and 4 eggs and slice the cake into 12 pieces and lasts days for the price. much cheaper that those stupid piddle shop bought ones. definetly saves money.

    Thanks for the tea loaf recipe, I have tweaked it to our own tatses and its proving a great filler and energy booster to my hubby who is on a low fat diet, he cycles to & from work and has a slice of this before he sets out:)

    I only use basic ingredients in my baking and yet it still tastes far better than anything shop bought, I do use free range eggs though, but always use Smart price flour, stork margerine, normal sugar and I use smart price sultanas/dried fruit:) I will use proper butter for butter cream though and for any jam fillings, I only ever use extra special jams.

    Hi All,

    The dreaded summer holidays are here!

    I am looking for some cheap (and hopefully easy) cake / snack recipes that my daughter can make herself (while I am at work so when I come home I get a nice cake and a cuppa!) :rotfl:

    Shes 15 and quite a good cook and can use the oven etc without supervision, but something fairly easy and cheap would be good!

    Hi, assuming you have a hand held mixer (whisk type) Victoria Sponge is easy and cheap. Fairy Cakes, same receipe but needs butter cream.
