    Hi Katie jane,

There's an older thread with lots of recipes and advice on making sausage rolls that should help so I've added your post to it.

Last Christmas I made some HM sausage rolls as a drinks party nibble, and mixed some small chunk pickle in with the sausage meat, along with a little finely chopped onion & chopped parsley, they went down very well!

    Hi all! :hello:
just a quick moan and a request for a little advice. As today is the first official day of my maternity leave:jI decided to go a little domestic goddess and make some HM sausage rolls for my hubby's pack up (perhaps I can justify only going back to work part time after my leave's finished, fingers crossed!). Well, the kitchen now looks like a bomb's hit it, myself, the kitchen surfaces, my hair and and the sink are covered in sausage meat and skin and I'm so stressed. It really wasn't as easy removing sausages from their skins as it looks when you see it on the TV! Do you think it's because I defrosted them in the microwave? I didn't use cheap sausages but they still turned to mush when I tried to unravel them. Anyway, I persevered, and have just got eight sausage rolls out of the oven and they're huge! didn't realise that puff pastry puffs up as much when cooked (you'd think the clue would be in the name, wouldn't you:o). There is no way that we are going to be able to eat them all in the next two days so how long will they last in the fridge do you think? or can I freeze them?. Sorry for the whinge but I just want some reassurance that other people find stuff like this tricky as well and that it's not just me that is a culinary incompetent!
    Thanks all :D

    Hi Jess

If it's any easier you can buy sausage meat that isn't in it's skins. My mum used to buy this when I was little and we used to make our own sausage burgers.

You take the skins off! :o

I leave them on, or use sausage meat which you can roll easily if you use flour to stop the sticky.

Love sausage rolls. Enjoy your maternity leave.

Thank you moany, will do :D
Have just tried the sausage rolls and have forgiven them for their fiddlyness- they are delish! Also don't think the storage problem is going to be that much of a problem now either- have just eaten two!
    Thanks all!

You could try doing a cheese and onion mixture instead of the sausage as that is great too.

I used to make pasties using a tin of corned beef mashed up with mashed potato and cooked diced onion and seasoning and DH loved them.

i always take the skin off the sausages and roll them a bit aswell, although i use fresh sausages not previously frozen. you can buy skinless sausages aswell. i normally use shortcrust pastry or make my own, it melt in your mouth. with puff either roll out thinner or once rolled out !!!!! with a fork this will stop it from puffing so much. hope this helps, sounds yummy anyway x.
One day I will live in a cabin in the woods
