Meal planning still going ok. Oh and if anyone cooks from the takeaway secret, the batter for the sweet and sour chicken balls freezes fine. We had them again tonight with leftover batter frozen two weeks ago. They weren't quite as good as the first time, but were still nice.

Mon: Breaded plaice/mackerel fillets/fish fingers chips & peas
Tues: Lasagne, HM garlic bread, salad
Weds: Jacket potatoes with cheese & beans/salmon mayo & salad
Thurs: Toad in the hole, mash, peas & gravy
Fri: Chicken curry, rice & naan bread
Sat: HM Pizza, HM garlic bread & salad
    Sun: Roast chicken dinner

    Let's have the story.

    The short version:

I'm rubbish at portion control. I blame my mother as she always fills the plate too full and there's at least 2 dinners on your plate. (Could also be the reason I'm no size zero either!):rotfl:

Anyway, I put all the ingredients into the SC, and then added the packet of sausages I'd defrosted the night before. Only they were little mini sausages and there weren't enough compared to the rest of the ingredients. So I got 5 portions of sausage casserole & 1 sausage-less version.

It's OK though, there's plenty veg to bulk it out and I won't go hungry.

    Monday
Lunch - carrot and ginger soup, HM bread
Dinner - veggie stirfry with rice noodles

    Tuesday
Lunch - Quinoa kitchari (sounds odd but is lentils and grain in gorgeous curry spices, bit like dhal)
    Dinner - Macaroni cheeze

    Wednesday
Lunch - Leek and potato soup, HM bread
Dinner - Veggie haggis, mash and broccoli

    Thursday
Lunch - Broccoli soup, HM bread
Dinner - Out with the boyf's parents

    Friday
Lunch - Veggie burgers and fries
Dinner - Falafel with houmous, salad and HM bread

    Saturday
Lunch - Tofu scramble (like scrambled egg but with tofu and red pepper, onions and spices)
Dinner - Veggie chilli and jacket potatoes

Breakfast round here is either porridge with maple syrup or toast with almond butter.

In case anyone is curious, I'm vegan just because I prefer to be and find this diet gives me more energy. Anything that looks like it contains milk or eggs, doesn't - I'm just good at substituting. :) We tend to make our bread ourselves just because we love the smell of it in the oven, not because it's 'special bread' or anything!

This will be my first week working as self-employed at home. I'm going to be looking at my old cookery books so future weeks might well be more adventurous... ;)
