    Yes KK it is late - but as it's for SE and not my proper job needs must. Meeting went fairly well - we ate about 9.45pm - which considering the people who came to see me didn't leave until 8pm and then I had some things to do - wasn't bad at all.

    I am afraid the the Pulled Pork is postponed till tomorrow night as I forgot to get the Pork out of the freezer last night :o whoops!

    Never mind - have some leftovers in the freezer that will make a perfectly good tea for us and we can have the Pork tomorrow.

  • So, the 'critical' meeting to do with my potential SE went quite well. I have a lot of work to do to get some things tested and methoding proved - but I am up for the challenge (felt better about it once I'd slept on it - felt a bit daunted last night).

    Quite tired today - had a bad dream - sharks after my toes - I know it's symbolic and that is probably how I'm feeling at work at the moment...

    More SE stuff to do tonight and then next week I will crack on with the paperwork I need to do.

    My DH has been so patient and supportive - I am so grateful...the next few months are going to be a little stressful, but once I get into it and all the paperwork is all done - things will be better - I really hope I can make this work!

    This is not about money - this is about a lifestyle change...

    Few things to be planned over the coming weeks:
    - Meeting up with a friend on Saturday for lunch after my 2nd SE outing
    - Possibly going to Wales to see our friends on Sunday.
    - Booking our 'Christmas Meal' with some friends of ours that got postponed because of DHs sickness bug.
    - Booking a night out at the comedy club - DHs birthday present from last year - if we don't do it soon, it will be his birthday again!
    - Look at booking my floating week and booking our couple of days away.

    All nice things to look forward to. DH needs to sort his friends out and I need to sort the other stuff out when we know when we are going out.

    So, tonights tea will be LO Chicken and Cacciatore Sauce with Rice and Veggies - I think a mid week glass of vino might also be in order...

  • Been a really busy week.

    Completed SE prep last night for my 2nd SE outing tomorrow. Wanted to get it done last night so I can go to yoga tonight and eat at a reasonable hour with DH and spend a little time together.

    Quite pleased that everything is pretty much ready to go - just got some parcels to pick up from my Mum's this evening (which contain things I need for tomorrow).

    So today I can concentrate on work, pay the change in the bank (yes, I have finally brought it with me to work), pick up a couple of things from B00ts, shopping at Herr A when I finish and then to Mum's to pick up parcels (even remembered to bring my keys to Mum's!)

    We had the Pulled Pork last night (be it quite late) and there are enough left overs for a couple more meals - so need to sort that into containers and freeze later.

    Tonight's meal consists of Salmon, Herby Potatoes and Veggies - at least we should eat a a fairly reasonable hour and I might actually get to bed before midnight (saying that, it was worth staying up and getting everything sorted last night - got into bed at 12.10; then had to get up again to put the pork into the fridge!!!)

    I love comedy nights, is it just a local venue or are they hosting any top comedian in particular? I know he isn't everybody's cup of tea but I love Jimmy Carr.

    I have pulled pork to do for the kids tonight, I can freeze it after even once its is already cooked?

    It's a comedy venue a city over from us...no one in particular - but went there with work last year and it was really good. Must pin DH down to book that one as he is soooo reluctant to plan anything - so much so, we don't do things...

    If you have made the Pulled Pork fresh, I don't see any reason why you can't freeze and use later after it's cooked - I do - you are only re-heating once (wouldn't recommend more than that).

    There are food safety police that would say you can't - but as long as you re-heat to piping hot after defrosting it should be ok (also make sure it's cool before you freeze it)...I've always done it - can't say we are 'piggy' enough to eat a whole joint of pork in one go between us :rotfl:

    Mine has gone from SC to fridge and will be frozen tonight...

  • Wow what a weekend!

    £91.80 made from SE adventures - more than last time, so quite happy with that - hope to break the £100 barrier next time I go.

    Went to Wales on Sunday to visit friends and didn't get back till late - fortunately they fed us and it was great to see the kids have their presents. (DH spent most of the day assembling L3go!!

    Then back to the hum drum!

    We have been quite good on the food front:

    Turkey Spag Bol on Saturday, ate down friends' on Sunday and stuck to meal plan again last night with Moroccan Lamb with Cous Cous (using LO lamb from a roast).

    Tonight's offering is Turkey Steak with Citrus and Ginger Sauce.

    I hope that people don't think I am making light of what I am going to put next because of leaving it till the end of the post....

    My brother was attacked yesterday afternoon in town - some random bloke came up to him and just started to strangle him - the long and short of it was that the bloke just stopped as quickly as he had started and walked off...my brother went after him and tore him off a strip and then went to find a policeman. When confronted the bloke said he'd done nothing wrong!!!!! He's given a statement to the police and they took him home. He's tired, shaken and sore today - but otherwise ok. Going to see him on the way home tonight as he didn't want a fuss making - so I didn't go up last night...the thing he was most worried about was he'd forgotten to get Mum's bacon that she'd asked for!!!! I am going to get this on the way home and deliver it!

    Un-believable!!! I think I am in shock, simply because of the calm way I am handling it - our family has had to deal with these sorts of instances before - when Dad was attacked 20 odd years ago it was much more serious - I wish that people would leave my family alone...

    Was a bit miffed that my PAYE wasn't right and I have had to pay more tax than anticipated...

    Oh well, onwards as they say.

  • Oh wow, that's terrible, just totally at random. I don't know if things are happening more often or just reported more often but there didn't seem to be as many oddballs or nutters in the world a few years back.

    Sorry for my ignorance I keep reading this SE, and I have no idea what it is lol.
