Meal Plans-Week Commencing 19th November 06

    - Italian Beef Hash = made with pack of frozen potato/ Mediterranean vegetable mix reduced from 1.79 to 30p
    - Pasta with spare rib sauce
    - Salmon fish cakes
    - Chickpea and sweet potato curry
    - Burgers and chips
    - Braised lamb with flagolet beans
    - Paella - got to use up an assortment of prawns, mussels and squid lurking in freezer.

    All served with either salad or veg, fruit or yoghurt. I only do puddings on SUndays.

    My meal plan for this week is/was
    Sat- peanut stirfry with noodles
    Sun- roast lamb [joint already in freezer]
    Mon- Honey ginger turkey [already got turkey]
    Tues- Pizza [on offer..night off as everyone dashing around!!]
    Wed- Chickpea and coriander curry with naan bread
    Thurs- Tortilla wraps with peas, creme fraiche and smoked haddock
    Fri- Pasta Milanese [this uses up the other half of the white wine needed for the turkey recipe]
    No puds..small person has a yoghurt.
    Lunches are piece of fruit, carrot, hm bread and filling [pate this week] and hm cake..choc cruchies and weetabix cake when they run out.
    Breakfast is cereal and cup of tea apart from Sun when we have a special breakfast [croissants, muffins or something similar and filter coffee]

    Tuesday: out to dinner - it's my birthday!
    Wednesday: chicken pie
    Thursday: sausages & mash
    Friday: soup & HM roll or cheese scones
    Saturday: fish'n'chips - we are out in the afternoon packing shoeboxes for Operation Christmas Child
    Sunday: Dinner at my mum's ( mine & nieces birthdays, so family gathering)

    oooh bit late with mine

    sunday- HM burgers & sweet potato wedges, salad, dressings etc
    monday - HM chicken chowmein & boiled rice & HM oat cookies :drool:
    tuesday - HM chicken in SC with wine/mushrooms/smokedbacon sauce & miniroasts
    wednesday -sausage, mash, veg & onion gravy
    thursday - were out at a mates for tea :)
    friday - fish pie as the last one was such a success :beer:

    I'm making these tonight. I've never made them before but I thought they sounded yummy too. Will let you know if they are.

    Chicken Spinach Parcels

    500g skinless chicken (I"m using cooked leftovers from roast in freezer)
    1 tblsp plain flour
    150g spinach, chopped (frozen is ok)
    1 tblsp cracked black pepper
    1 cup shallots (I don't have that much so will throw in some onion too)
    1 tsp butter
    8 medium mushrooms, chopped (I don't have any, so leaving them out, will pop in a zucchinni, I forget what you call them, there long and green :D)
    1 tsp chicken stock
    200ml cream
    1 cup grated cheese
    filo pastry or puff pastry sheets (filo would make a lighter meal)

    Slice chicken into strips like a stir fry. Melt butter in frypan or saucepan, adding chicken, shallots, mushrooms & pepper. ( I will add cooked chicken at the end) Saute lightly for 3 mins.
    Add flour & mix well. Add spinach, cream & ch stock powder.
    Heat until sauce thickens and add cheese and remove from heat until cool.
    (you can do this step earlier & assemble the parcels later on)

    Layer 3 sheets or filo, slice in half, and spoon about 2 tblsp of mixture onto one end of the filo stack, then roll like a spring roll, tucking the ends in. (or just have puff or HM pastry)

    Spray lightly with oil, sprinkle with sesame/poppy seeds and bake in hot oven for around 20 mins.

    EDit: Ok, I just made them and they were scrummy. I decided to put red capsicum instead of the mushrooms/zucchini. Used 250g pkt of frozen spinach, and it was 250ml of cream. Made quite a bit so froze the extra for another night. I used puff pastry. Everyone loved them.
    Don't worry about the world coming to an end today. It's already tomorrow in Australia. ;)

    They sound scrumdiddly, and I've got loads of spinach in fridge and some puff pastry in the freezer, I'm going to give them a go and will freeze the left-overs.

    One of my dearest friends is in Brisbane and we always have the zuchinni/courgette and aubergine/egg plant conversation when we are swapping recipes.

    I'm now starting to plan for next week. Here's the beginnings of my meal plan:

    Saturday - pancakes for children, then DH and I out to a party
    Sunday - remains of rib of beef from Friday, with roast roots and yorkshires

    HM rissoles from freezer
    Lamb shank bargain from butcher, also in freezer
    Pumpkin rissotto
    Something with pastry
    Something with pasta
    Salmon and prawn fish pie

    Sunday - roast pheasant with apple and cream
