Ok the 7.30am ferry has broken down  and we are getting picked up in an hr. So got a bit of time up my sleeve.
Breakfast Thatch
1 cup grated potato 1 cup chopped bacon or ham
2/3 cup SR flour 1/3 cup corn niblets drained
2 eggs, beaten 1 small chopped or grated onion
salt & pepper
Mix all to a batter. Heat frying pan and grease bottom with oil. Pour in mixture and spread it evenly, cook until brown underneath and set on top. Turn and cook the top until brown. Cut into wedges and serve.
I usually make HM chips or wedges and salad. I also use any limpveggies and grate them in that I want to get rid of.
If you make it Thriftlady you can rename it Aussie Thatch.Don't worry about the world coming to an end today. It's already tomorrow in Australia.0 -

Thurs - HM pasta and tomato sauce
Fri - HM toad in the hole with onion gravy
