It's going to depend on which bits you have left over, such as thighs, or breasts, or just bits... but many of the recipes here can be adapted to suit what you have and the various "rubber chicken" threads have LOTS of ideas in them:-

I just made a crusty chicken casserole tonight and everyone loved it. It was so easy to make.
I microwaved 3 diced bacon rashers with an onion for about 2 mins. I then put them in a bowl, added 1 can cream of chicken soup, 200g tub lite sour cream, cooked chicken and a glug of worchester sauce. Place all in casserole dish.
Rinse bowl out & add 1 cup SR flour, 1 egg, 1/2 cup grated cheese, 1/2 cup milk & a bit of cayenne pepper. Place on top of chicken mixture & bake in mod oven 3/4 hr.
YS was here for tea and doesn't like bits in it but I would add other vegetables in the casserole base like mushrooms, celery etc & you can add chopped capsicum in the batter part as well. But it was delicious plain too.Don't worry about the world coming to an end today. It's already tomorrow in Australia.0 -

MAde a white sauce tonight, added the bits and pieces of meat off yesterday's chicken carcass (minus one breast - that's my lunch tomorrow;)) and some mustard, salt and pepper, topped with cheese on top of a baked potato. Bit like a posh toast topper
THis would work well with gammon/ham too.
