What main dishes can you make with cooked chicken

Can anyone help, I am useless in the kitchen when it comes to thinking up ideas for meals.

If I cook a whole chicken and use the cold bits during the week can someone give me ideas for meals to make with the cooked chicken.

My husband will not eat:

mushrooms
any coloured peppers
sweet potato
anything hot (no curry or chilli!)

Edit: no sweetcorn either!

    Chicken Pie?

    With a white sauce, add courgettes, sweetcorn. onions to a white sauce base.

    this can also be used in between lasagne sheets & served with galric bread, or with rice or pasta.

  • I'm doing the same with turkey.

    Use the carcuss for a soup.

    You can use the meat for pasta dishes - mix with sauce and pour over pasta.

    Put it in sandwiches for lunch.

    Eat it cold with potatoes and peas.

    Make a stew or casserole.
    Wannabee champagne girl...on a beer income.

    Pasta Salad. Cooked cold pasta, chopped onions, cucumber, tomatoes, sweetcorn, cooked chicken, big dollop of mayonnaise, mix together. Delicious for a packed lunch. If you're watching your weight, leave out the mayo and stir through some pasta sauce from a jar.

    Failing that, ditch the OH and get yourself a dog. They eat most leftovers ;)

  • How about chopping up leftover chicken and adding to two-thirds of a tin of tomatoes, herbs and chopped spinach. Ensure chicken is fully heated through and then fill cannelloni tubes. Lay filled cannelloni tubes in an oven-proof dish and top with remaining tomato, sprinkle with herbs and lots of grated cheese. It can be put in the fridge for later or simply baked for 30 minutes until cannelloni is soft and topping is brown and crispy. Serve with salad.

    Use lasagne sheets if cannelloni is hard to come by.

    enchiladas
    'curry' (this word doesnt do justice to Indian cuisine;)
    'Curry' so called does not have to be 'hot' if you use paprika, cumin, coriander and turmeric it will be flavoursome but mild.
    biryani
    risotto
    palella
    chicken fricassée
    coronation chicken
    chicken and leek pie
    chicken sweetcorn and trailing egg soup
    sweet and sour chicken
    chicken casserole
    chicken in aspic ( a bit weird but you did ask)

    as for the OH if he is fussy work on it, subtlety is the key;)

  • Canederli - or chicken dumplings - served in a broth made from the carcass. You'll need some parmesan cheese to finsih off the dish though.
