Carrot cake or muffins - both use sunflower oil instead of butter/margarine, so you are not there for ages beating sugar and butter together!0

Hi, does anyone have any suggestions for what I can make for the school fete that maybe won't cost a fortune? I'm running the cake stall and I know from experience that there won't be many contributions so I always make loads myself (I don't mind as I won't be giving my boys much actual money to be spending there so this is my contribution to school funds). Usually I'll make whatever takes my fancy and not think about the costs, but I'm trying to be more OS this year. Am already thinking about making some twinks and a few dozen fairy cakes, but does anyone else have any ideas for goodies that are easy to make and don't cost the earth? The fete is tomorrow so I'll be baking today, I have most of the basics in already - stork, sugar (soft brown and caster), flour, baking powder, vanilla, eggs, SP choc bars, icing sugar, coconut etc

How about good old rock buns, melting moments (the ones that are kinda like a biscuit and rolled in cornflakes wi a cherry on top), empire biscuits and scones. Sometimes I would do a tray of shortbread, (8oz cheap butter, 5oz SR FLour, 4oz Plain flour, 3oz Cornflour,4oz caster sugar, melt butter in pot, add everything else and put in greased swiss roll tin, stab (cause cant say pr*ck!) with fork bake 25 mins at about 190-200, slice when hot and then sprinkle with caster sugar, leave in tray until cool or it will crumble), I usually sell this in bags of four and a tray gives you roughly 16-20 pieces These are things that I would normally make as the ingredients are not too expensive. Looking back these were the main things that my mum baked when we were wee and money was tight....... guess we have gone full circle now:-)

I did a twist on rice crispy cakes and put chopped up marshmallows with them and they were very yummy.
For red nose day, I made fairy cakes, scooped out a well on the top and put in a tsp of jam and a swirl of butter cream on top and finished with a cherry....there wasn't many left at the end and they looked lovely.
I make millie's cookies style cookies as well and they go very quickly, cheap and easy to make...I get the cheap chocolate from Sainsburys...30p ish for a big bar and chop it up for the choc. chips.0 -
I used to always do something quick and easy for school fetes, normally some type of traybake with water icing, chocolate usually goes down well with the kids. Shortbread fingers are also quick & easy, if I'm making them for home I'd use butter but just use stork for school fete ones.Dum Spiro Spero0

I would say that if you make fairy cakes, decorate them in a way that appeals to the wee ones if they are going to be sold individually. Eg, with a sweetie perched on top of the icing. Then the kiddies will choose those. For adults, what about brownies?
I have a school fete next week so will def try the lemon drizzle cake. And Twinks, of course. For a more 'adult appeal' I brush melted dark choc on the twinks, and then sometimes drizzle with a wee bit of white choc.
Oh, and another thing that is great is to finely chop some stem ginger and put in the twinks mix. Tastes amazing especially if covered with dark choc.
