    Malteser tray by Nigella:
    100g butter
    200g milk chocolate
    3 tablespoon of golden syrup
    225g Digestive Biscuits (finely crushed)
    225g Maltesers (crushed up abit)

    MELT TOGETHER THE BUTTER , CHOCOLATE & SYRUP.
    ADD FINELY CRUSHED BISCUITS & MALTESERS

    MIX TOGETHER QUICKLY, THEN POUR INTO A LINED TIN, PUT IN FRIDGE TO CHILL & SET.

    This then can be cut up into individual pieces, or i have used individual fairy cake cups instead of a tray. Also try adding some raisens to the mix ?? MMmmm
    This really is tasty!
  • or try....Chocolate Truffles:

    -300g chocolate, chopped
    -1/3 cup thickened double cream
    -40ml dark rum (if desired)
    -100g (1 cup) Chocolate drinking powder or coco powder for dusting

    1.Place chocolate, cream and rum in the top of a double saucepan, or in a heatproof bowl, over a saucepan of simmering water and stir occasionally until smooth.
    2.Transfer to a bowl and refrigerate for 2-3 hours or until firm enough to roll into balls.
    3.Spread cocoa over a shallow tray and roll 2 teaspoonfuls of mixture into small balls with cocoa-dusted hands, then roll in cocoa until well coated.
    4.Alternatively you may roll it over roughly chopped almonds
    5.Place on a baking-paper lined tray, and refrigerate for at least 1 hour before serving.
    -Will keep in an airtight container in refrigerator for up to 1 week.
    -Makes about 40

    ROCKY ROAD CRUNCH BARS

    125g soft butter
    300g dark/milk chocolate , broken into pieces
    3 x 15ml tablespoons golden syrup
    200g Rich Tea biscuits -crushed
    100g mini marshmallows
    2 teaspoons icing sugar for dusting
    Serving Size : Makes 24

    METHOD

    1.Melt the butter, chocolate and golden syrup in a heavy-based saucepan. Scoop out about 125ml of this melted mixture and put to one side. 2.Put the biscuits into a freezer bag and then bash them with a rolling pin. You are aiming for both crumbs and pieces of biscuits. 3.Fold the biscuit pieces and crumbs into the melted chocolate mixture in the saucepan, and then add the marshmallows. 4.Tip into a foil tray (24cm square); flatten as best you can with a spatula. Pour the reserved 125ml of melted chocolate mixture over the marshmallow mixture and smooth the top. 5.Refrigerate for about 2 hours or overnight. 6.Cut into 24 fingers and dust with icing sugar by pushing it gently through a tea strainer or small sieve.

    Thanks for all the suggestions. We went for a chocolate sponge traybake, Smarties cookies and DD (10yo) made her own fairy cakes. I'm all baked out :)

    Hi all,

    I am newly housewifing since I quit my job, so money is tight! DS has a cake sale for charity at school on friday- normally my contribution would be small change for him to spend and contribution sponsored by Mr Kipling! As money is now tight and there isn't a lot to spend I was thinking of spending Thursday making some homemade goodies that aren't too expensive, I suggested making some of Twinks Hob-nobs but apparently these are not good enough as they are "biscuits" and not "cakes" but am ignoring DS and going to make some anyway as they are super-cheap! I wondered if anyone had any ideas for cheap, nice cakes suitable for things like this, am guessing frosted things are out as they make a mess in the tub! lol I would appreciate any help on this as am quite worried that everyone is going to be looking down noses etc as I am newly housewifing and quite enjoying it, money is tight but at least my mental state has improved lol! Hope someone can help x

    how about some chocolate crackle cakes? Melt chocolate and stir in rice crispies. then add sultanas or marshmallows or smarties or coconut and stir. either put into a large glass dish, leave to set then cut into squares or put into individual cake cases. makes loads really cheaply especially if ingredients are all tesco value brand. noone will see the brand once they aremade up ;)

    Hi,

    Some popular one ive done.

    Mars bar cakes

    Melted mars bars about 5 (fake ones from asda I use)
    butter
    fake rice crispies
    golden syrup
    cooking chocolate

    All melted together with cheap cooking chocolate slathered on top.

    Is really chewy and nice. I slice it up and its always the first to go.

    Rocky Roads

    Digestives, marshmallows, chocolate, glace cherrys other bits and bobs, all mixed up with butter and some melted choc put in fridge and slice.

    Soooo easy and cheap.

    Another one I read on here which goes down amazingly well and is very simple.

    Few packs extra strong mints crushed up add melted cooking chocolate and put in fridge. Like after eights but nicer.

  • Weetabix brownies are a winner:

    4 Weetabix crumbled
    4 oz sugar
    4 oz SR flour
    2 tbsp cocoa powder
    1 egg
    100 gr chopped chocolate
    4 oz melted marge

    Mix dry ingredients. Add melted marge (I put this in the microwave on "defrost" for 2 mins), add beaten egg. Put into baking tray and bake @ 180C/350F for 15 mins. rest for 5 mins then turn out and cut into squares.
