School cake stall - your chance to make me look good!

    DS's primary school is having a fundraiser in a fortnight which includes a cake stall. I'm going to make some HM cakes to send but i am wondering what to make. Any suggestions?

    I am wanting to make some stuff that is pretty easy (i.e. idiot proof) but looks good and will sell well but obviously as cheap as possible to make.**

    Any suggestions welcome.

    ** what i don't get is that schools often have these fundraisers but wonder if indeed they will actually rasie any money. If it costs me 90p to make a cake that they sell for £1 - what's the point:confused: Or even worse a cake that costs me £1.50 to make but they sell for £1!! Wouldn't be easier just to ask me to make a donation?

    There was a thread on here the other day with somebody else who needed school fete cakes.

    I recommend the same: Mr Bad Examples Chocolate Yoghurt Cake :D

    A favourite at my kids' school fete were shortbread and apricot and orange scones (just add grated zest of orange and small diced apricots in place of cherries)

    Well I made the yoghurt cake - so damned good there's none left :o

    Will next attempt shortbread, weetabix brownies and choc cup cakes - all in the name of research...

    hi we just tend to make shortbread biscuits,cut into shapes with kiddies pastry cutters,we have stars/moons etc and we ice them,they are very scrummy,recipe is 6oz plain flour
    2oz caster sugar
    4oz firm butter

    mix all together till you get a smooth dough,roll and cut your shapes out,cook at 325F(160C) bake for about 15 mins,we have to make double because they never last very long

    Hi!! I would recommend mars crispie cakes. These are really easy to make!! I am making some to take into work to sell on Friday for Children In Need!!

    To make these you melt 3 x Mars bars with 3oz butter, do not boil (i do this in a large saucepan on the hob). When melted, mix in 3oz rice krispies (i used tescos own ones). When nicely evenly coated I press into a greased baking tray (square tray to make slices or round tray to make 'wedges') and pop in fridge for an hour.

    Then melt 200g chocolate with 1 oz butter (I did this in the microwave) and spread over the top of the krispie cake. Then leave to cool. Put back in fridge for about 20 mins then cut into pieces.

    This is really scrummy and easy!!

    I used two great cake receipes the past couple of days and they turned out fantastic..

    The first one is:

    Lemon and raisin bars

    85g self raising flour
    85g porridge oats
    50g soft brown sugar
    85g butter
    For the topping:
    25g butter, melted
    3 eggs
    175g soft brown sugar
    140g raisins
    85g dessicated coconut
    the grated rind and juice of a large lemon
    50g icing sugar

    Turn the oven to fan 160C/conventional 180C/gas 4. Put the flour, oats and sugar in a bowl and rub in the butter with your fingertips. Tip into the base of a 26x18cm tin and press until smooth. Bake for 10 minutes or until pale golden.

    Beat the melted butter, eggs and sugar with the raisins, coconut, half the lemon rnd and 2 tbsp of juice. Pour over the baked base and return to the oven for 20 minutes more until the top is set and pale golden. Mark into 12 bars while still warm, then leave to cool before cutting through.

    Tip the icing sugar into a small bowl and mix with the remaining lemon rind Stir in up to 3 tsps of lemon juice to make smooth icing then drizzle in diagonal lines over the top of each bar.

    These will keep in a tin for up to a week. They are best NOT frozen as it will spoil their texture.

    You can also try out different combinations of fruit as well, substituting cranberries instead of raisins, or apricots instead of the raisins, or half raisins and cranberries, or dried blueberries or really any dried fruit combination.

    Coconut cookies


    85g porridge oats
    85g dessicated coconut
    100g plain flour
    100g caster sugar
    100g butter
    1 tbsp golden syrup
    1 tsp bicarbonate of soda

    Turn the oven to 160 C fan/180 C conventional oven/gas 4.

    Mix the oats, coconut, flour and sugar together in a bowl. Melt the butter in a small pan and stir in the golden syrup. Add the bicarbonate of soda to 2 tbsps of boiling water, then stir into the syrup mix. Pour into the dry ingredients and stir to mix. Put dessertspoonfuls of the mix onto a greased baking sheet, well spaced out. Bake in batches for 8 mins or until golden. Cool on a wire rack.
    Will keep for upto a week in an airtight tin.

    Makes 20 biscuits, costs about 30p a biscuit and can be frozen.
