Can you make rice pudding with risotto rice

Does anyone know if you can make rice pudding with risotto rice as the last place in town (Waitrose)that sold pudding rice has stopped selling it?

    I think that risotto rice is sort of between a long grain rice and a pudding rice. I've seen rice pud made with basmati rice so I dont see why you couldnt.

    anyone else any ideas?

  • I think you can make rice pudding with risotto rice, but I think you may have to cook it on the hob rather than in the oven.

  • Hiya, I'd just give it a try, I don't think it'd go far wrong, just keep an eye on it!

    I know you didn't ask, but this is the recipe for my favourite rice pudding, it's an old Weight Watchers one, I think. The quantities below are supposed to be for 4 portions, but to be honest, they do 2 or 3 portions imho! Just eat with a teaspoon, make it last longer!

    The original recipe suggests using skimmed milk, but I find the end results are FAR better using semi-skimmed. Never tried it with full fat though, come on, I'm not that decadent!

    Don't be put off by the cardamon or bay leaves, the flavour is quite subtle. They usually get caught in the skin as it cooks, so it's generally quite easy to find them before serving.

    I've tried various permutations, adding coconut, dried fruit, raisins, chopped nuts etc on different occasions, and it always turns out nice! Just experiment!


    80g Basmati
    60g sugar
    800ml milk
    2 bay leaves
    4 cardamon pods

    Bring to boil, simmer for 30-40 mins till desired consistency is achieved. I have to admit I usually stick it in the oven rather than on the hob, so I don't know about how often to stir it!

  • Useful thread...thanks OP. Tried to get pudding rice in my tesco delivery this week but they didn't have any in. Got some risotto rice in that needs using as DH isn't that keen on risotto so it'll now get used.:D
  • I got a huge bag of short grain pudding rice in Asda for £3.85 it is about 3kg and should last a long time
