I used to be able to buy a bag of lamb chops of the market- mishaped ones etc - can't now because of rules and regs that got brought in...anyway... I always used to make (and still do!) a jug of gravy and cook them in, it makes them lovely and tender and they don't shrink. pop a few spuds in that are cut up fairly small and have with some steamed veg - especially tasty if you know it cost pence on the reduced aisle! I also do this with pork chops and sometimes chicken.0

Great veg dish.
In roasting tin, put potatoes, carrots, mixed peppers, garlic, courgettes(don't need to peel, just slice up), add rosemary or thyme from herb box, add some garlic/normal oil, bung in oven. Bit later add cherry toms and mushrooms. Voila! Fab, goes well with anything. We could have this every night of the week with meat/cold cuts etc. Definitely better than bought stuff & very cheap. Looks very colourful as well, great if you have guests and want something easy to cook that looks and smells wonderful..
We often eat this
I spray veg with 1 cal spray oil to reduce calories, red onions are always nice in it,
and if you line the pan with foil, no washing up ;DI am a Senior Forum Ambassador and I support the Forum Team on the Wales, Small Biz MoneySaving, In My Home (includes DIY) MoneySaving, and Old style MoneySaving boards.
