Help Please! Dumplings without suet?

    Hi penny,

    I make dumplings from an old good housekeeping recipe -
    6 oz SR flour
    1 oz butter / marg
    pinch salt
    pinch dried herbs

    Rub the butter into the flour, add the salt and herbs (if liked), then add col water to make a dough. Form into 8 - 12 dumplings and put in the pot for the last 30 - 40 mins of cooking, with the lid off.

  • Try this as an alternative:

    175g Self-raising flour
    1/2 teaspoon salt
    1/4 Cayenne Pepper
    25g butter
    75g cheese (i.e. Cheddar)
    1 egg
    3 tablespoons milk.

    Mix together the flour, salt, pepper, butter and 3/4 of the cheese.
    Beat together the egg and 2 tablespoons of the milk then add to the flour mixture and blend together to form a smooth dough.
    Brush the top of the dumplings with the remaining milk and top with the left over cheese.
    Add to your soups/ stews and bake for approx 20min until risen and golden brown.

    To add more flavour you could add some dried herbs.

  • Hi, i'm new to cooking so forgive me if this is a stupid question :o
    Was wondering if anyone had an easy recipe for dumplings without suet? I have most baking ingredients but looking on some recipe websites they all have suet. They will be cooked with mince on the hob if this helps?

    you can replace the suet with the same amount of margarine (not low fat though) or butter & it works well

    just rub it in as if you were making scones, then mix & cook in the usual way


    was my evil ex mother-in-law taught me that & I've lived to tell the tale ;)

    You can use butter :D Take a look at this thread; I'll add this one to that later to keep ideas together.

  • Olive oil works fine as well, if you do not like the taste mix in a few dried herbs
    for herbie dumplings . YUM !

    I always use oil in dumplings. I don't like the claggy coating on my mouth which suet leaves, and oil makes lovely light dumplings.

    I've tried these the other day, inspired by a recipe in Jamie's America:

    150g SR flour
    150g cornmeal
    150g butter or marge
    herbs
    salt, pepper
    3-4 tbsp water to bring it all together

    form into finger-shaped dumplings (you'll get about 12 from this mixture), drop on top of your stew and simmer for 30 minutes or thereabouts.
