Hi all!
#7 today! Yipee!
Spoon - the chicken dish was yum!
Recipe:
Griddled Chicken
2 Chicken Breasts, skin on
2 cloves garlic, finely chopped
1 red chilli finely diced, or a qtr teasp chilli flakes
1cm root ginger, grated
1 lemon, zest and juice
3 tbsp olive oil
couple of handfuls of flat leafed parsley chopped (nice but not absolutely necessary!)
Put all ingredients in a non metallic container and leave to marinade. (The longer the better)
Preheat the oven to 180c
Heat griddle pan over mod heat & sear chicken, skin side down until skin is golden and crisp.
Transfer to a baking tray and finish in the oven - 10 mins or so at 180c
Meanwhile, cook your tagliatelle ( or whatever pasta you fancy) .
Drain and place the sliced chicken on top, drizzle with a little of the juices.
Alternatively, you can wrap each breast in tinfoil, drizzle over the marinade and bake in the oven for @ 20 mins. Take off the foil for the last 5 mins to brown up.
HTH:)
Sounds yummy, gonna try thatPlease tell me how!!!!!
I'm glad I'm not alone in my diet coke addiction, there's at least 6 people I've now "met" on here who have the same problem!suzie_wong wrote: »Scary, isn't it?!

Not doing too good in this! One of my resolutions this year was to spend less time on laptop and go to bed earlier - so not logging on to MSE means I keep forgetting my challenges!!
Monday was a NSD, yesterday was not and will do my best for today to be a NSD.
Well done to everyone who is going full guns blazing!0 -
