Misspenny, you can't do much to tweak the mixes, so get some strong (bread ) flour, breadmaker yeast, and make your bread from scratch. Any oil/butter/spread will do for the recipes, wouldn't bother with the powdered milk or Vit C, and you've got salt/water/sugar in the house anyway. You might want to reduce the sugar content, I use 1 tbsp.

I have just found this thread so forgive me if im asking something thats prob. been asked loads of time!
Ive got a MR Fastbake bm but have only seemed to get one half decent loaf out of it!!
Im doing exactly what it says in the manual but it either rises lovely (nearly hit the top last time!) but then sinks or comes out a bit 'stodgy' in the middle!
Ive gone back to hand making it and put my BM in the cupboard....any suggestions please?0 -
I'm not an expert by all means, but it sounds like a yeast problem to me?
Rising too high would indicate too much and the loaf being stodgy would indicate not enough.
Would someone care to correct me on this if I'm wrong?
Also, are you putting the milk powder in? I leave this out of my bm as I think it makes the bread very cakey and stodgy.

Great thread, dumb question approaching..
My Grandmother just gave me her MR 48220 BM, only thing that is missing is the teaspoon measure. I have 7g sachets of yeast, how spot on do I have to be with 1and 1/4 tsp, I assume we are talking flat level tsp ?

I use 1/2 a sachet for 1.25 tsp
I wouldn't worry about being extraordinarily precise, but just remember that the 7g sachets are designed for hand baking. The BM is warmer and the kneading more vigorous than when you do it by hand so 1/2 sachet works well. Too much and the bread rises too high, hits the top of the machine and then sinks.0 -

has anyony tried making the bread with the sun dried toms in it? can you use sun dried toms out of a jar, the ones in oil or do you need to use dried ones (not in oil)? if it's the last one, wher can i buy them?Back on MSE again! to take control of my finances and not let it control me. :T May grocery challenge £41.96/1400 -
just tryed the sandwich loaf its a bit stodgy towards the middle but otherwise pretty good, my mesurements could have been a bit more accurate but i was in a rush to get everything thrown in befor going outtwins on board0

I have used dried ones. I snip them into smaller pieces and also add around a tbsp of red pesto.
I have bought the tomatoes in Morrisons (Merchant Gourmet brand). I recall seeing them in Julian Graves.

Yeah i do put the milk powder in if it says too but think i will leave it out and see what happens, thanks , i'll let you know as making some tomorrow!0 -
Has anyone tried the bread mix from Lidl?
I bought the Multi Grain mix today (green bag, made by LANDGUT), was 99p for a 1000g bag which makes 2 loaves.
It says to use 'Normal/Browing:Middle or Dark' on the back of the bag?
As I assume this is for continental breadmakers would you bake this on a large loaf, whole wheat and medium colour setting in your Morphy Richards fastbake?0
