sponge mix

can any body post a basic sponge cake recipe 4 me please???? i only got dd's barbie cook book to go by and it only turns out a piddly little thing. :mad: and im fed up with buying cake mix as its a waste of money! :eek:

oh and any other recipes that i can follow with my 2yo ds n 8yo dd please? they love baking!:j

    Basic Sponge is really easy.

    I use:

    6oz S/R flour
    6oz Caster Sugar
    6oz butter/marg
    3 eggs

    Cream butter and sugar. beat eggs and add gradually to mix. Fold in flour and mix well. I often add a small drop of vanilla ess (approx 15-30ml). Bake in oven until brown and bounces back when you press lightly on it. Approx 20 mins depending on oven.

    If you want to make a chocolate cake substitute 1oz flour for 1 oz cocoa powder.

    This will make 2 reasonably good sized sponges which you can cream together with buttercream (icing sugar and marg/butter creamed together)

    You can make a larger mix by using 8oz flour, sugar, butter and 4 eggs
    or 10oz flour, sugar, marg and 5 eggs......etc
    (or smaller 4oz everything and 2 eggs)

    Edit: Meant to say that I use this make for buns as well. Never had any complaints about cakes or buns !!
  • Basic sponge - 4 ounces/100g self raising flour
    4 ounces/100g caster sugar
    4 ounces/100g butter (softened)
    2 medium eggs
    teaspoon vanilla essence (optional)
    cream butter + sugar.
    Add eggs one at a time with one tablespoon of
    flour to prevent curdling (and vanilla essence if used).
    Add rest of flour (sifted).
    Bake for 20-25 mins - timing varies if fan oven or not -
    at 180 degrees celsius.
    Cake is done when, if you press lightly with a finger, it springs
    back.

    Shortbread biscuits are easy. My two have made them before.

    Put in a bowl:

    9oz plain flour
    6oz butter (can use marg but biccy's not as rich)
    3oz sugar

    Rub butter into dry ingredients, then knead into a paste.

    Roll out on a floured surface and cut out shapes with cutters.

    Put on a greased baking tray and bake at 160°C for about 20-25 mins.

    Every Day Biscuits - Make and bake, or make and freeze, then bake

    Yield: between 45 - 50
    Gas 5/190C/ 375F

    Metric Imperial
    225g 1/2 lb butter, softened
    100g 4oz caster sugar
    225g 1/2lb SF Flour
    5ml 1 tsp vanilla essence
    To finish: sprinkle of icing sugar

    Beat together the butter and sugar until light and fluffy, add vanilla and fold in the flour
    Mix to a smooth dough
    Turn the dough out onto a floured surface and knead for a minute or two. Roll into a sausage shape approx 5cm/ 2in in diameter, put in fridge to chill until firm.

    To Freeze: Wrap in foil, pack in a freezer bag. Seal, label and freeze.
    To Thaw and Serve: Thaw in the wrappings in the fridge for approx 30 mins, then cut into thin (ish) slices, place on greased baking sheets and bake in a preheated oven for 10mins.
    Transfer to a wire rack and leave to cool. Sprinkle with icing sugar before serving.

    Variations:
    Chocolate: Sub 25g / 1oz cocoa powder for the vanilla.
    Cherry: Add 50g / 2 oz glace cherries, finely chopped
    Nut: Add 50g/2oz chopped almonds or walnuts.

    Notes:
    These take moments to prep. I make one batch and cut the 'sausage' in half before chilling. Once chilled to firm, one half is then put in the freezer.
    The "dough" will keep in the fridge for a few days, so you can "slice" fresh biscuits as and when required.

    6 oz baking marg like stork
    3 eggs
    1 tea spoon vanila essence
    1 tea spoon baking powder

    slosh of milk (about 1 table spoon)

    Chuck in bowl all togther and mix briefly. Trust me it works!
    Gas mark 4 170C about 30 mins
    Be lazy and line a square cake tin with baking parchment. Justcrease it into shape.
    Then you also do not need to fill the middle of the cake with butter icing or jam. Just get some icing sugar sift it stir in a little hot water to glaze the top.

    Basic recipe in Delia's cook book all i have modified is with the milk. Keeps it really moist.

    Fab with custard too.

  • update : dh is off work (and didnt tell me) so we went shopping today so havent got time to make a cake..............but we did do the biscuits. mmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmm drool yum dribble..... thanks for posting them queenie!!!!

    I've tried to bake a sponge a couple of times over the month, but it won't rise and looks just slighter larger than a bisuit :confused:

    I use 4oz of caster sugar/normal flora marg/flour and 2 eggs, any ideas what I could be doing wrong please??? Am baking on 160 for 30 mins......
