    My list (with basil & oregano instead of mixed herbs) only totals 11.

    For your Indian spices, you really need a masala dabba.

    I'd never heard of sumaq either, but a bit of Googling found this under a different spelling ...

    I keep and use :

    rosemary, marjoram, parsley, basil, bay, turmeric, saffron, coriander, cayenne, oregano, and occasionally sage.
    Be careful who you open up to. Today it's ears, tomorrow it's mouth.

    Oops! I fogot my saffron, altho' there is only a pinch left, which I'm saving for my next paella.

    I have had to get my spices organized,as they were languishing in the most inaccessible cupboard in my kitchen.,half of them in plastic bags which seem to spill out when i am ferreting through looking for something else I probably haven't got.It occurred to me I have numerous kitchen drawers filled with junk,so I had a clear out,and bought some of those trays from ikea that spice jars (well round ones anyway) fit into.A medium drawer takes 18 jars.
    By my cooker I always have, bay leaves,rosemary and black peppercorns,for stock.

    That looks very ornamental, but not very MS. Are the pots airtight?

    The ones I use most are oregano, bay leaves, mixed herbs, thyme, crushed chillies, paprika, cayenne pepper, nutmeg, basil, sage, lemon pepper (good for using when making hm chicken goujons), ground ginger. I grow my own rosemary so cut that fresh when I need it. Will plant some thyme soon too.

    I have a rack that holds 36 herbs and spices and, having just checked, I have used all of them at some point or another though some far more than others.

    I have just chucked loads of out of date herbs and spices-I hadn't even opened most of the jars and have had them for years. The ones I actually use are thyme, rosemary, black pepper and smoked paprika. The rest I have in the garden and just cut them as I need them.

    this thread has reminded me that I need to sort out my spices out. Loads are out of date:eek:

    The spices I use daily are corriander (love this one, great in soups and curries and gravy)
    paprika, great on roast pototoes
    chilli powder
    black peppercorn

    These are much cheaper directly from Indian supermarkets (of which we have in abundance in Bradford) as are the spices to go in them

    I have too many spices too mention! But I have been trying to get hold os Sumaq for ages, can I ask where you bought yours from please!
