Help, what is all-purpose flour?

I have an American recipe for cookies which uses all-purpose flour. Any ideas which I should use, plain or self-raising. I am really dumb when it comes to cooking.

    I have just done a google search for you and found

    "all purpose flour translates as plain flour"

    sorry i can't link you in (i'm useless with the pc) but hope it helps.

  • i never knew that, i have been using sr flour for years with an american recipe, will try it with plain next time,

  • I still use Sr flour instead of all purpose! as it seems to work better! I don't know if its something to do with the amount of baking powder you are supposed to put in but when i switched to plain when I realised what it was just didn't get the results.

    It's the american term for plain flour.
    On the flour and grain website it quotes:

    "Where can I get all purpose flour?
    All purpose flour is sold in the UK as plain flour. '

    As your recipe uses baking powder you wouldn't need to use self-raising as that way you would have double the amount of raising agent.
