your comment got me thinking - copper has a tendency to turn things green I think (if I remember my schoolboy chemistry.) I'll have to have a look at what I used and see if copper was involved anywhere...0

There isnt much information on pickled onions in the "preservers year" neither are there recipes in the mega preserving index by apprentice tycoon.
I am new to pickling - as you may have noticed i have picked up some kilner jars recently.
There seems to be a huge variation in recipes for pickled onions - white and dark vinegar, which spices to use etc.
Can you share your particular favourite recipes. Any hints and tips for a beginner?

There's a whole thread hereI like to make crunchy onions, so I sprinkle with salt and leave overnight to draw out the liqid. I then make a vinegar with honey and spices. I leave for about 3 months before using

This is the recipe I use that was in one of the Sunday papers last year and I think is an adaptation of a Delia recipe. It scales up very well, I did 4 X the amount this year
[FONT="]Chilli Spiced Pickled Onions[/FONT]
[FONT="] [/FONT]
[FONT="]500g shallots or tiny onions[/FONT]
[FONT="]100g salt[/FONT]
[FONT="]1tsp mixed peppercorns[/FONT]
[FONT="]¼ tsp mustard seeds[/FONT]
[FONT="]Pinch dried chillies (I used a BIG pinch)[/FONT]
[FONT="]400ml pickling vinegar[/FONT]
[FONT="]1 tsp muscovado sugar[/FONT]
[FONT="] [/FONT]
[FONT="]- Add all vinegar ingredients into a pan, cover with a lid and bring to the boil. [/FONT]
[FONT="]- Remove from the heat and cool completely.[/FONT]
[FONT="]- Place salt in a pan with 1L of water, bring to boil and cool completely.[/FONT]
[FONT="]- Add the shallots unpeeled to 500ml of the brine and leave for 12 hours.[/FONT]
[FONT="]- Drain off the brine and peel the shallots.[/FONT]
[FONT="]- Add the shallots to the remaining brine and leave for 24-36 hours.[/FONT]
[FONT="]- Remove from the brine and drain thoroughly through a colander.[/FONT]
[FONT="]- Pack tightly in a sterilised jar and cover with cold spiced vinegar.[/FONT]
[FONT="]- Keep for 3-4 months before using.[/FONT]0 -

What is the best spices (was thinking pepper corns, musard seeds and chilli seeds)?
Just want to make sure I get them cheap as and do not know if a) got to wait to late summer when the supermarkets do those large string bags of them or not............... Have you ever wondered what

pickling onions are usually about at the end of the summer.
I always use ordinary malt vinegar and spice it up with the spices you've mentioned. For sweet vinegar I just add sugar or honey into the vinegar........enjoyI get paid to smell great :j0 -
