  • Made my first ever batch of pickled onions and I think I've ruined them!!!! I like them hot and spicy but not this hot. Opened them last night to try and my god they blew my head off!!!! Can I do anything to save them? I wondered about draining some of the liquid and topping up with vinegar??!! Any help please??

    How long ago did you do them, and what did you put in the vinegar? If you put in too many chillis it may help to drain off the vinegar and put them in new and leave them for a bit. If you only made them a couple of weeks ago, they are always a bit harsh when they are fresh, so try leaving them a bit longer.

    Take a few (not more than 5) around to any neighbour with a cold? Sounds like it would get the sinuses cleared without anything complex from the pharmacy!
    But fresh vingear & time will also calm them a bit.
  • We were given a jar like this a couple of years ago. I strained out the spices and refreshed the vinegar, but it didn't really tone them down. I think once the spice oils get into the onion flesh, that is the end of it. Those ones had chillis in them, YMMV with regular pickling spices. If not, rinsing and soaking small batches as you need them might work. Or using them in casseroles etc, if you have made too many to waste.
  • I stumbled upon this thread searching for pickled cauliflower recipes... do you think I could do it the same way? I love the pickled cauliflower you can buy in shops but the bright yellow colouring used in it puts me off a bit, I wouldn't be surprised if the jar glowed in the dark!

    Also, I'm not a fan of the pickled onions I've occasionally bought, do HM taste nicer?

    um - I think once the onions have 'pickled' its the devils own work to calm them down! I would try serving them with a nice yoghurt dressing!

    Is the pickled cauliflower you refer to actually piccalilli ?
